What can I do with a couple of large courgettes ?

They need using up, I was thinking maybe a courgette and potato soup. Does anyone know a naice recipe for it ?
Will 2 courgettes be enough ?
There is only me and the Dts who are 3.
I also have an aubergine and lots of peppers so could do something Mediterranean like. I would be really grateful for any other suggestions.
Preferably semi healthy as I am still kidding myself that I am going to lose weight this month Grin

We do use them in spag Bol and lasagne quite a lot.
We haven't got any mince though.

You're welcome Hyva, I am not much of a baker but really want to get better, I would much prefer to bake stuff than eat shop bought.

How do you make your soup Tea ?
Soup is a big hit in this house and I have part baked rolls in the cupboard that I can have with it.
Do you think 2 will be enough ? Like I said there will only be me and 2 3 year olds.

Oven dish. Tin of tomatoes and chopped red onion in the bottom, sliced courgettes layered on top. Pour over some double cream and cheese on top. In the oven. Yummy with jacket potato.

Or courgettes cooked in butter and add garlic, sprinkle of coriander and pine nuts. Great side dish.

But just noticed you said healthy... Sorry!

Personally I would grate them and fry them off with onions/peppers/broccoli/other veg of choice and then add several beaten eggs, mix, top with cheese and cook until set... frittata/omelette

Yes good idea this looks quite nice.

I did courgette fritters with roasted garlic tonight. It was very easy to make.

We make a courgette and beetroot chocolate muffins. I try and convince myself they are part of the kids 5 a day...

Courgette and Boursin soup?
Gently fry chopped courgette and onion, add veg stock just to cover and simmer for 20 mins. Then blend till fairly smooth. Reheat and add the Boursin, stir till melted, & serve.

I always use them mostly in my lasagne or lemon chicken casserole. Their flavour is bought out at its best when you frylight them first with peppers and onions. Lovely for the taste buds. Also very healthy :)

Fritters with feta, that's DD1's idea if heaven.

She's always getting me to buy feta and that's a way if using the same stuff I'd like too.

Courgette and pasta soup, make it with small shell or star pasta, lovely for children.
Or just grate and toss in butter with some crushed garlic for a few moments, a very quick and easy veg, especially good with fish or chicken.
Or use in a frittata, for a quick lunch dish.
