What can I use to thicken sauces etc if DH is alérgico to gluten?

This is a new development, we think it's gluten as he reacts to wheat products, so what can I use in place of flour? I can't seem to find corn flour here.

Try looking for manioc, cassava, or tapioca flour. If you can get tapioca/manioc flour then you can make Pao de Queijo which are the nicest gluten free bread rolls ever and make an amazing pizza base too.

You could also just whizz rice in a coffee grinder attachment to make rice flour

Thanks CMOT, didn't know I could wizz the rice myself, I have a thing, tech term, that I use for coffee beans so will try that. Didn't get as far as the food shops today but will look for all the suggestions tomorrow, hopefully.

Okay, found Maizena and buckwheat in the Health food store, shall start with Those as I can't afford anything else this week. He's just going to have accept that he's given up bread for now.

Couldn't Get buckwheat flour, this is whole grain, will try the bigger Health stores in the capital next week for the flour.

He is rather resistente to change so I'm going to give him the buckwheat in place of pasta in a 'pasta' salad at the weekend and see How that goes.
