What can I use to thicken sauces etc if DH is alérgico to gluten?

This is a new development, we think it's gluten as he reacts to wheat products, so what can I use in place of flour? I can't seem to find corn flour here.

Corn flour is really common, you should find it in most supermarkets. Are you in the UK?

Cornflour really should be easy, and it's light enough to buy online or get posted by a friend if you're living somewhere very peculiar that doesn't have it.

Can you have a look on iherb for some gluten free flours or even corn flour? They have quite reasonable international shipping if the order is less than 4lb (and it weighs the order in your basket) and I think they deliver all over the place.

Mashed potato works well for some things, although it makes stuff really filling. I like it in stews and soups. Probably not for a spag bol!

What about chopped spinach? The frozen chopped spinach from Sainsbury's (or your local equivalent) spreads particularly well through a chopped-tomato-in-tomato-juice sauce base. Add chick peas (and onions), and it's a great store-cupboard meal, which can be adapted with fresher ingredients.

YoniBotts I bought what I thought was corn starch, but it must be something different as it didn't thicken. I also have a packet of flour made from corn, which doesn't thicken either. Súpermarkets don't have any gluten free flours, and not many GF productos either. Seems to be that catering for food allergies is a new concept here.

I'll look in the Health food shop, another 'new' thing here, but being married to someone who wants me to spend Zero on the week's shop doesn't helpHmm

Corn flour is actually corn starch so if you used flour made from corn it is a different entity.

Egg yolks/egg whites can also be used in some sauces.

Indian dishes use nuts for thickening.

Other alternatives are guar gum, locust bean, xanthan, agar, rice flour.

That was what I thought about the corn flour/corn starch thing, but then I thought I was confusing things.

Haven't seen that Hazel, could be I haven't looked properly before, it's only this year he's had a problem and only this week that he has accepted it could be wheat/gluten.

I don't know if rice is gluten-free or not (does anyone know?), but if not you could use pure baby rice!

I did it ones when I ran out of flour and it worked!

Masa should work as a thickener for sauces and stews, etc. I imagine that's fairly easy to find in South America?
