When you're on your own for your evening meal what do you cook for yourself?

I rarely cook when me when DH is away but I'm starving tonight and I forgot he was going away so I have some lamb steaks to use up. Usually have cheesy beans on toast!

Anything with spinach in it. DH hates it ("Food of the Devil") so I'll eat it until its coming out of my ears!

oh good I'm glad it's not just me that can't be bothered to cook when their DP is away!

I tend to have:
cheese, bread, and grapes
beans on toast
soup and toast
pizza Blush
fish finger sandwhiches
heated up chilli when I've bothered to cook a big batch

It's a few evenings a week for me. I either eat with the DC and try to get them to attempt something new (4 and 1), or enjoy something easy once they're in bed - boiled eggs, mushrooms on toast maybe.

Grilled cheese sandwich and/or soup with chopped up green peppers. Gotta be green or my meal is ruined.

Often take away, though. We rarely have it and I love not cooking.

I either go the 'can't be bothered to cook' route and have any old bits from the fridge, or I make myself something that DP doesn't like but I love.

Yesterday went the first way, I had a tin of mexican tuna with leftover salad leaves and tinned sweetcorn.

But a couple of weeks ago I made myself a delicious rataouille. DP hates the stuff but I love it.
