When you're on your own for your evening meal what do you cook for yourself?

I rarely cook when me when DH is away but I'm starving tonight and I forgot he was going away so I have some lamb steaks to use up. Usually have cheesy beans on toast!

Usually leftovers! Failing that feta, gherkins, any salady bits chopped up, dress with mayo, add black pepper, stuff in warmed up pitta.

I tend to end up with either pasta pesto or a bowl of cereal Blush TBH it doesn't happen very often these days, though I am on my own this weekend. Now the DCs are older I just cook for all of us. I value their nutrition far higher than my own.

I often cook something he doesn't like so tonight I had gammon steak, new potatoes and veg. A bit boring really. Sometimes on those nights I will have egg on toast.

Whizz up a few breadcrumbs, dip the lamb in egg,then breadcrumbs and fry, serve with salad or chunky bread and chutney, Wine

I normally have Alpen ! But if I was going to cook, it'd be cauliflower cheese or mac cheese dh/ds don't like cheese sauce and its one of my fav foods

Omelette with whatever's handy in the fridge in it - mushrooms, tomatoes, cheese etc. with baked beans and oven chips if I can be bothered waiting.

It rarely happens tbh, but if it does it's generally:

  1. V lazy meals = tomato soup and toast or cheese and toast / omelette and salad / pitta, hoummus and crudites / mushrooms on toast / Greek salad

  2. If I can be bothered meals = cauliflower cheese / haloumi with chilli and lemon juice with salad / baked Camembert

I made lentil dhal in the slow cooker and had 2 bowls. I love a slow cooker meal waiting for me when I get home from work. I plan to use up some chick peas and pop them and some spinach in the slow cooker in the morning then I don't have to worry about cooking when I get in. I ll pick up a roti to have with it at the shops at lunch time. I'm looking forward to my lonesome dinner tomorrow night :)

If I know it's going to happen in advance I get a pack of those mussels in garlic and white wine sauce that are dead easy to cook served with toasted ciabatta, a slice of chocolate cheesecake and some wine to drink. Is a lazy meal but feels special and a bit indulgent.

Usually a bowl of cereal or fried egg on toast unless I happen to be near an M&S on my travels with work that day in which case I often treat myself to a meal for one Grin

Otherwise I will stand at the fridge & pick.

Dh is rarely away but when he is I have tuna sweetcorn pasta, he hates it but I love it!

I normally go for beans on toast with cheese. Tonight I am having Yorkshire breaded scampi! I haven't had scampi for years!
