I have no blender or other contraption so all my soups are the kind with bits in. So....what have you got for me? Grin

I can smell Autumn....she's there...it's time to think on!

I am particularly interested in vegetarian and vegan recipes but meat is good too! Grin

Moroccan Chickpea Soup is lovely.

Mushroom and sherry soup is nice in cold weather.

Fry onions, garlic, mushrooms (add a chunk of flour). Add stock and boil up. Add a good glug of sherry before serving.

chop up butternut squash and 2 sweet potatoes into about 1" cubes place in roasting tray toss in a little bit of olive oil and a few teaspoons of ground ginger and maybe rosemary spray roast till cooked add to chicken 2-3 pints stock and blend or else mask up before adding to stock season to taste plenty of black pepper to make go even further add tin of chick peas or swap ginger for harissa paste or curry powder

great with soda bread

I am currently eating a bowl of Spiced Cauliflower Soup and it is fab.

Break 1 small cauliflower into florets and place in a roasting dish. Sprinkle with 1 heaped tsp of ground cumin, salt and pepper. Spray with squirty oil and roast approx 20 mins at 200c. It should be tender and slightly charred.

Chop 1 onion and clove of garlic. Spray saucepan with oil and soften onion and garlic. Add 1 pt veg stock and add cauliflower and simmer 5 mins.

Blitz with hand blender. This makes two portions and only has 55kcals per portion.

I found this veg and lentil soup recipe on Pinterest earlier.

It's going in the Parker family repertoire as it sounds fab.

Carrot and cheddar :).

Fry off onion and garlic.
Add sliced carrots and a couple of cubed potatoes.
Add veg stock and cook for 15 mins.
Blend and add a sprinkling of grated cheese.

I know it's seen as a bit boring but September is a really good time to make tomato soup. It doesn't have to be plain tomato, either. I do mine with chillies, or red peppers, or mascarpone.

I LOVE soup season!

Today I started it off with a Parsnip (bag reduced to clear for 30p!) and added the 2 Sweet Potatoes I had left over from the weekends roast, i also added some sage and basic seasoning then I blended it so DS could have some in his sippy cup. It was really nice. Smile

This lentil and tomato soup is nice. It goes well with naan bread.

I do it in the slow cooker. I just add everything in one go and put it on for about 4 hours. Take out the bay leaves, blitz it with the hand held blender then maybe add a bit more stock if it's too thick and leave for another 30-60 minutes.

I love soup; someone upthread said about Tomato soup in September.....
I made a batch yesterday....roast halved tomatos plus garlic plus balsamic plus thyme plus olive oil. After 40 minutes, tip into a saucepan with 500ml chicken/veg stock.
Blend.
MMMMMMMMMMMMMMM
Freezes well too.

And if you serve this with homemade brown bread....well I'm not embarassed to serve this to anyone invited to lunch at my house.

Spiced lentil and apple is good too, if you have sharp apples to use up.
Mug of red lentils, well rinsed, 2 large bramleys, onion and celery stick finely chopped, 2 carrots, 2 pints of veg or chicken stock, curry powder or your own blend of fresh spices, toasted and ground, garlic and ginger, finely grated.

Fry onion, celery garlic and ginger until translucent. Add spices and stir. Add lentils, carrots, apples and stock. Cook until lentils are tender and then blend. Doesn't taste fruity or apply just autumnal with a lovely sharp hint to it which goes well with the lentils and spices.

I like cooked butternut squash, carrots & leek plus fried onions blended or mashed. I like it bitsy too!
add a splash of orange juice (plus salt & pepper)
fry bits of bacon till crunchy, scatter on top of bowl of soup.

  1. warm any soup that you fancy. freshly made, carton or pot - it doesn't matter
  1. add gin

I made chicken soup today.
Pack of leg/drumstick/thigh portions with skin on.
2 large carrots thinly sliced
1 large stick of celery thinly sliced.
parsnip (optional)
2 leeks or one large white onion diced.
Dried or fresh dill (generous amount)
Chicken stock cube.
Vermicelli or egg noodle pasta strips.
Black pepper to taste.

Bung the chicken bits in large pan of water. Bring to boil and simmer till chicken is cooked. Skim off any scum that forms as liquid boils. If poss leave overnight and scrape off fatty layer on top. If thats not practical - sieve the stock through a piece of muslin/coffee filter paper. Add all the other ingredients and cook through till all veg soft. Cook noodles and drain. Add to soup. Yum.
