Soup! It's soup season! Can I have your best soup recipes please?

I have no blender or other contraption so all my soups are the kind with bits in. So....what have you got for me? Grin

I can smell Autumn....she's there...it's time to think on!

I am particularly interested in vegetarian and vegan recipes but meat is good too! Grin

Today I made broccoli and stilton soup (recipe from BBCgoodfood), it was quite nice. Will probably make it again as it makes a complete meal in itself.

Maryz - this recipe is for pumpkin, but I use sweet potato or squash. It is very tasty, especially with the spiced onions.

This recipe is really quick and tasty.

This chicken noodle soup is lovely. I use leftover roast chicken and a little goes a long way.

We always have soup and sarni night. Nice homemade soup and and a sarni on the side, ticks ALL the boxes.

Fry onion, or two.
Add garlic and carrots.
Add stock (of any kind or marmite if no stock).
Add cubes-ish of potatos.
Add red lentils.
Salt and pepper.

Eat!

It is thick, delicious and filling.
I also just add whatever I have lying about, broccoli, peas, tomatoes, whatever really. Ooh bacon, it's nice with bacon too!

Fantastic thread. I go to uni at the end of this month and need recipes I can hash up the night before to reheat for the masses the next day. I will definitely be trying a few of these ones out Smile

Oh just read you've got a blender. One of my favourites us Nigel Slater's curried parsnip soup.
I can't find the recipe but this looks the same.

I never have enough time to wait for butternut squash to cool to scoop out of the skin, so I always peel with veg peeler, chop in half, scoop out seeds and strings, and chop into 1 inch chunks before I put in on a baking sheet to roast. Sprinkle with any spices you like: I love cumin, coriander, cinnamon and allspice but any one of these will still be nice.

On the same tray (or separate if your trays are small), put two or three apples, peeled and cored and chunked and two onions, peeled and quartered to roast at the same time.

Then when it's all tender and browned you can just scrape the hot veg straight into a pot (no faffing around while waiting for the squash to cool), add enough stock just to cover, simmer for a bit and then whizz with stick blender.

Oh, and I usually use a bag of prepared butternut squash as life is too short to peel and dice one!

Oh yum. I LOVE soup. I choose soup in Pret A Manger or heat up a carton more often than having a sandwich in the winter.

My favourite soups to make are cauliflower (it is delicious), leek and potato (I like it blended and I cook the leeks in butter along with half a finely chopped onion), lentil and bacon and french onion with the toasted cheese crouton.

If I have a lot of time I make Nigella's minestrone, which is really very good indeed.

This winter I intend to branch out and make some spiced Indian dahly type soups and I'd also really like to be able to make good Chinese or Thai soup if anyone has any good recipes?

Okay my fallback butternut squash soup as follows...

Chop and fry an onion, couple of garlic cloves, a good hit of ground cumin (1-2 teaspoons) add a whole cubed butternut squash. If you've only got a small squash or need to feed more people you can easily add 2-3 large potatoes and not affect the flavour. Pour over chicken stock and simmer until soft, blend until smooth.

Absolutely delicious :)

Mintyy I make Thai Tom Yum soup. I do cheat as I use Tom Yum paste.

Add Tom Yum paste to taste to chicken stock. I also add a teaspoon of lemon grass paste.

Add quartered tomatoes, halved mushrooms, and chopped spring onion. Simmer for 5 minutes.

Add chicken or prawns and pak choi. Heat through and finish with lime juice and a splash of fish sauce.

To make a complete meal add egg noddles.

Yum.

But just to add...we have had sweet potato, red pepper & chorizo soup for dinner tonight and it was soooo tasty! We have soup at least one night a week.

DH has chilli oil which he sometimes adds to his cooking....it's quite hot. He makes it himself but I am sure you can buy it.
