Bulgur Wheat - come and educate me!

So I got a salad in Marks yesterday - carrot and coriander but Bulgur Wheat was a key ingredient. It's delicious! Why haven't I heard of it before now?!

How does anyone cook with it and what to serve it with? Is it best in salads? Recipes much appreciated!! Smile

I use it in tabouleh. Spring onions, chopped tomatoes, chopped cucumber (optional), lemon juice, olive oil, fresh chopped mint and masses of fresh chopped parsley. Mmmmm.

It's lovely in all kinds of salads - tabouleh is traditional but try mixing warm bulgur with:
asparagus + toasted almonds + goat's cheese
roasted squash + cranberries + pine nuts
roasted beets + red onion + feta

We use it plain as well, like rice or couscous, to serve under/beside anything with a sauce.

I've had this recipe for spicy greens and bulgur bookmarked for a while but haven't made it yet.
