Ingredients

55g/8oz bulgar wheat
425ml/½ pint boiling water
1/2 tin sweetcorn
chunk of cucumber diced
2 large tomatoes (seeds removed) remaining flesh, diced
2-3 tablespoons of mayonnaise to taste
Optional extras
1 large spring onion chopped
1 large carrot chopped
Cooked bacon bits

Method

Place the bulgar wheat in a large bowl and pour over the boiling water. Cover the bowl with a plate and leave to steam for at least 5 minutes until it's all absorbed and then fluff with a fork.
Leave to cool and then add the other chopped ingredients and mix in mayonnaise. Bung it in the fridge.
Chill before serving.

This was so yum. I changed a couple of things. I used chicken stock instead of the boiling water, grated the carrot instead of chopping it, used plain yoghurt instead of the mayo and squeezed on some lemon juice. Everyone commented how much nicer it was than couscous.

This is always a hit at any barbie or summer party. There's then usually leftovers for lunch afterwards so I have started making this just for lunch - makes such a change from a dull sandwich.
