Desert using frozen raspberries

Suggestions for a desert for 6 people using frozen raspberries please (have loads in freezer really need them using!). Thought about eaton mess but they are quite runny when defrosted so don't know if it would turn to mush.

Ideas please?! Smile

Use them in an Eton Mess, you don't have to defrost them. Just crumble them up. They break really easily and will crumble nicely into your meringue and cream!

Raspberry and white chocolate (or skip the chocolate) gateau

Make a victoria sponge mix using 4 eggs. Do not loosen with milk, but can add 2Tbspns of creme fraiche or sour cream for moisture (I always do). Crumble in 3 big handfuls of crushed frozen raspberry bits and divide into 2 cake pans. Bake as normal for victoria sponge.

Buttercream to sandwich: 100g butter, 200g icing sugar, and defrost and sieve 1 handful of raspberries to get juice. Str the juice into the well beaten buttercream unevenly to get a ripple effect. Pipe or slather between cakes. Dust the top with icing sugar. Looks grand on a platter. My family's favourite sunday cake.

Just put the frozen raspberries in a pot on the stove. Heat them up -- they will quickly be a sauce. Serve over good vanilla ice cream. No need to add anything to the raspberries. They melt the ice cream a bit and it's delicious.
