Bombay Potatoes

got some cooked spuds to use up tonight. As we're having curry I thought I'd make bombay potatoes.
Anyone got a good recipe that's easy?

I would:

chop and fry a medium sized onion in olive oil

finely chop a clove of garlic

Add: a tablespoon of medium curry powder
a large pinch of turmeric, a few cumin seeds if you have them (not essential)

Add: some spinach if you have it, or cooked cauliflower, or quartered tomatoes (these are optional)

Add a knob of butter and cook the mixture, keeping it moving with a wooden spoon/spatula, until the powdered ingreients are well blended and the butter melted

Add the potatoes and some fresh coriander.(if you haven't got fresh coriander, use dried, but add it with the onions/garlic/curry powder etc)Mix and cook until potatoes are coated and piping hot

If it seems too dry, add a little water or some more butter/live oil if you're not bothered about fat Grin

Serve

I'm sure there are hundreds of ways, but this is my personal recipe and I think it tastes gorgeous.

Now what on earth is wrong with good old fashioned English spuds??????? I don't know! All this foreign food, I mean, no offence to foreigners but their food does taste funny!!!!!They'd be far too spicy for me anyway!!!!!!!

What a common word "effin" is!!!!!! I take it that 'Cod' is from the lower, commoner classes, her obviously dislike for Capital letters and to put in correct punctuation when shortening a word, speaks of her rather common upbringing!!!!!!! I think she needs a good hug!!!!!!! Don't you dear??? Smile

Darling, why go exotic when you have all that is best right here in Britain!!!!!!! Smile Honestly I do think the only reason people cook exotic foods is not because they like the strange and often bizarre concoctions, but it is to please their "differently raced" neighbours!!!!!! I mean, it simply would not do to be called "racially challenged" now would it???????
I would go for mash with a spot of champagne!!!!!! But then, I am mad!!!!! Totally mad!!!!!!! Smile

I had bombay potatoes in Tonbridge Wells in 1976 and I have never had them as nice again since..a very expensive Indian in an olde worlde place
