my fishfinger-and-waffle-addicted dd2 has decided that she likes beans
a lot
my repertoire extends to chilli, cassoulet, and that's about it
would love any ideas please.

Sauasage and bean stew. Cook saugsages, add tomato sauce (either homeamde or bought), add any kind of beans except butter beans. Cook. Serve with mash. Add chorizo if you like.

I would reckon on two sausages per person and one tin of beans per four sauasage.

You could replace the sausages with chicken portions.

My DH makes a wonderful 3 bean dish, with quorn (but mince is fine) He does it like a bolognaise sauce and puts it in wraps, then bakes them with cheese on top.

It's my favourite meal of the week!

Tarka dal. If I was on death row and I got to choose a last meal it would be that, with a stuffed paratha. I don't have the recipe off the top of my head though. Red lentils, garlic, onions, ghee, spices, yum.

We do a sausage and bean stew similar to above but with diced potatoes in rather than mash (dd not a fan of mash)
Onion, garlic, chopped toms, dried mixed herbs, canelini (sp sorry!) beans or just mixed and pots simmer for 40ish minutes/until potatoes are done. We grill the sausages and add 10 mins before serving sliced but can add them whenever really. Full recipie is on the healthy start website.

Madhur jaffrey natal red kidney bean curry, I don't often have all the spices but it still tastes good.

Tortilla soup

White bean mash. Nigella recipe but really, just heat a bit of olive oil with garlic or whatever flavours you want, add canned beans, warm through, start mashing up in the pan while doing so.

Works as a side dish but also, I like using it to top slices of crusty bread.

Also, you can use black beans as a fajita filling.

Nigel Slater seems to love beans, actually, if you Google his name and 'beans', lots of recipes come up!

Chana dal or yellow split peas instead of using red lentils. Really lovely. I did one the other night where I left a lot of the chilli out (more suited to dc?). Tomato based good, spinach good with it.

Jamie Oliver has a fantastic chorizo and chickpea soup. It's so yummy. V filling too. For every day I skip the pata negra and egg as they are a bit ott and don't add much imo. I'm sure google will give recipe. Basically fry the chorizo, celery, onion garlic for 15m on lowish heat with lid on pad, then add 2 cans tomatos, 1.3l of chk stock, large can chickpea and spinach and simmer. Mmmmmmm!

Lazy veggi curry, Mixed beans, onions, jar of Korma sauce, student standby for my Jewish friend and surprisingly nice.

DMIL used to do onions, tuna fish, butter beans and top with cheesy bread crumbs.

I make beanburgers......

6-8oz cooked drained beans or chickpeas
Finely chopped onion
Grated carrot
Tablespoon or two of rolled oats
Tablespoon seeds (sunflower, pumpkin...)
Flavourings...... curry powder, chilli flakes, chopped herbs etc to taste
Salt and pepper
1 egg, beaten

Mash the beans/chickpeas well or blitz in a food processor. Stir in the rest of the ingredients and set aside for about 30 minutes to allow the egg to be absorbed.

With wet hands shape the mixture into patties and fry on both sides in a little shallow oil until nicely set and golden

Felafel
Two tins of pulses - kidney and chick peas work well.
Fryed onion, chilli, cumin and fresh and dried corriander. Whizz in a food processor and roll into balls or squash into patties. Fry and serve in a pitta with lods of salad and yogurty/mint dressing. I sometimes cook whizzed carrots and peppers witht he onion too.

We all love traditional lentil and bacon soup made with puy or brown lentils.

I also love lentils with herbs and lemon juice/olive oil/bit of garlic or chilli, on a salad.

Tin of beans, olive oil, salt and garlic.
In a pan until some is mashed up and some gets crispy bits. Rosemary if I can be arced.
then some feta cheese crumbled up on top.
One poached egg and it's the perfect dinner for one when I can't be bothered with anything else.
Sometimes I don't bother with the egg as well.

Crockpot enchiladas w/black beans. Super fast and easy to put together. Just layer tortillas, canned tomatoes, chopped green chilies, seasoned chicken or minced beef, shredded cheese, black beans, and some enchilada sauce. Do several layers then cook for a few hours. Serve w/sour cream.
