Flapjack recipe please ?

I need a recipe for flapjack that is just that - a recipe for flapjack not crumbs.

Today I followed Nigella's recipe and now I have a box of crumbs in the freezer I'll use to make a crumble sometime.

What do I do wrong ?

I use SoupDragon's recipe

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
100g demerera sugar
baking tin, no bigger than about 18cm x 28cm

Method: 1. Preheat the oven to 160 degrees c

1. Line the baking tin with baking parchment.
2. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
3. Add the condensed milk and mix. Bring to the boil for about a minute.
4. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
5. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
6. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

You can substitute honey for the syrup and change the amount of sugar - I use less as they can turn out very sweet. I've also substituted some of the oats for assorted seeds and they're fab covered with a layer of chocolate.

They taste just like the soft gooey ones in M&S.

I tend to make double and so as I don't have half a tin of condensed milk tempting me.

Ah ! Condensed milk working as glue. I like it. I will definitely give it a go as I've been looking for puddings my picky son will eat instead of a block of chocolate and I've seen him eat flapjack but not mine !

Silly question but do you think 2 tablespoons of syrup is around 50g ? I hate sticky measuring spoons...

Good tip for the spoon - I guess I figured since I'll have the saucepan on the scales to add the other ingredients, I might as well weigh it.

Next stop, chocolate sponge and custard. He eats that !

Nigellas book has an error in the qty of syrup!!

Should be 150g NOT 50g - have it pencilled in my book after finding a list of Nigella eratas on a website a while ago.

Also have developed our own recipe which uses up old cereals from packets that would otherwise get chucked out.

So its not me being an absolute failure! I went with Nigella as she's not one to go light on the sugar or fat which is what a flapjack needs.

NigellaPleaseComeDineWithMe could you point me in the direction of the error page - there are a couple more recipes which haven't worked for me....

Does this recipe work with really fine oats like Readybrek for example?

Kids have gone off it just after I bought two boxes on special offer and it's nearly out of date.

Will try to find it But I think most are written into her books, plus a few other tweaks of our own. Even Nigella says it's OK to change to your own taste or for oven differences. Yes a bit of a fan (see my other posts!! ) but most of hers seem to work well. Have done quite a few myself!!

I'm not sure ready brek would make a traditional flapjack but half and half with oats might be ok ? Or there's always the crumble route - I use up out of date muesli this way and then freeze it to sprinkle on fruit... I hate waste, hence the dozen frozen bananas.... I think I drive the family crazy.

2 tablespoons of syrup is 75g.

I weighed it as I got bored with the whole tablespoon mess!

wrt Ready Brek, you might want to add stuff like raisins & seeds to make the texture more open. It might be a little dense otherwise.

Stirring in about 100g or so of chocolate into the hot flapjack mix is nice BTW.

To make a cake-like flapjack use half and half oats and flour. This is much less crumbly and I think is more like the ones you get in coffee shops. Also my mum always added a pinch of salt and a squirt of lemon juice which makes the taste much less bland. You don't taste either salt or lemon but the flapjack is better!

i've not tried but read that ready brek can be used in place of flour in crumble topping.
i have it noted that my Nigella recipe worked and i liked it! Wondering what i did now!
flapjacks-
450 g rolled oats
75 g brown sugar
300g butter
50 g golden syrup or honey.

I found mary berry's too buttery for me but here it is:
225g butter/marg
225g demerara sugar
2 TBS golden syrup
275g rolled oats

Am liking these!

I don't add syrup to flapjack anymore, just butter and soft brown sugar.
