Ideas for vegetarian sandwich fillings?

Sorry, like I said on my other post I keep asking food questions but...

what are your favourites that don't include cheese?!

Everyday we seem to have cheese/tomato, cheese/branston, cheese/beetroot, cheese/salad........getting a bit bored of it now:)

Egg mayo.
Humous and red pepper/tomato/lettuce.
cream cheese and something.
Roasted veg and goats cheese or humous.
Mushroom pate.
tofu, dressing and salad.

ok ok i know it's cheese... but mozarella, tomato and pesto? (bit dff from cheddar!)

LOVE humous with anything

Another vote for humous, lettuce and grated carrot here!
Sweetcorn and tomato (can use mayo if you like, I don't)
Egg salad
Mung bean sprouts and chickpeas

thanks everyone they're really good!

I always look at pate and think I'd like to try it but then I read the ingredients and it says liver and fat or something horrible! Never knew you could get vege ones so I'll get some of that! I'm not 100% vege you see but hardly eat any meat so buy a lot of vegetarian food........

I tried houmus a couple of weeks ago for the 1st time (it's the chickpea one isn't it?) and liked it but was just dipping breadsticks in it - never thought to put it in a sandwich but it seems popular so I'll try that and lots of the others too!

Ricotta, honey mashed with banana and a few raisins thrown in for good measure.
Have you tried tartex? The mushroom pate is lovely.

humous, roasted red and yello peppers and watercress or rocket in a flatbread.

falafells with salsa or humous and mixed green salad.

On the roasted-veg line, I love griddled veg, especially courgettes, or (even better) leftover vegetable fajita mix - very good in a tortilla.

Or smoked fish paté? (blend smoked mackerel with cream cheese and/or fromage frais)

(In the supermarket the veggie paté's never in the chiller with the meat paté, it's at room temp, usually with the tinned tomatoes etc)

I've just sat here and eat 4 houmous lettuce and grated carrot sandwiches:o They are really nice thanks! Now I'm having chocolate and wine:o

Will definitely be trying as many as I can of all these you've all suggetested....thanks again

Thanks to this thread, ds1 and I are now indoctrinated into the delicacy that is wholemeal pitta bread with houmous and grated carrot:)

sometimes the veggies pate is with the other veggie stuff (Quorn etc) or with the organic chilled stuff.
Will try some of these ideas on the DSs - DS2 only likes marmite or marmite and philadelphia and DS1 only likes "butter sandwiches" Grin

If you go to health food/whole food type shops you can buy Tartex ( known in our house as Fartex due to the effect it has on DD Smile)in a tube -like a pate type paste. Its lovely.
