The courgette glut has started - recipes anyone

We hardly got any courgettes last year as they all dried out, so this year we went a bit mad and planted 13 plants. Of course they have all gone mad and we now have courgettes coming out of our ears. The chickens and guinea pigs get a big one each day, and we are eating them with almost every meal.

Anyone got any good recipes to jazz them up a bit, or ideas on how to preserve them?

If you let them get big you can stuff them. Scrape out the middle, steam for 10 minutes, cover in Bolognese sauce (or similar) & cheese or cheese sauce (whichever you prefer) & bake for 1/2 an hour.

If you have small courgettes (along with the big ones), you can make mini courgette fritters along with your fried courgette flowers, and serve them on a salad of rocket with a little buffalo mozzarella or, if you have some, burrata.

Had a lovely courgette salad at weekend. Few leaves, green beans and a tahini based dressing. Hugh FW if you want to google. Also make his anchovy and chilli dressing to have with any surplus vegetables we have.

or pan fry them down until a bit squidgy add some garlic/stock and cook down for a bit and then add creme fraiche. serve with pasta/black pepper. Superb.

Last night I had courgette and smoked tofu kebabs with a peanut sauce, though you could use meat! I used baby sized courgettes from dads allotment, cut them into chunky slices, threaded them onto skewers with chunks of smoked tofu,, brushed with oil and grilled until charred.

I made the peanut sauce with peanut butter, garlic and ginger purée and a few tblsp water and poured it over the coked kebabs. Serve with rice.

My mum also has a great recipe for "zucchini slice" basically a cheesy eggy quiche type thing, that she uses when my dad has a courgette glut. I'll see if I can get hold of it...

this recipe looks about right. It is very tasty, and you can use the leftovers for lunches/picnics etc.

Courgette and pea and mint soup delicius!
Onion
butter and oil
courgettes diced
Cook for a bit..
add chicken stock, few leaves mint, couple handfulls frozen peas

cook for 5 mins then blend

In our house we call this "snotty potatos": slices of corgette fried up with par boiled potato slices. Add garlic, worstershire sauce and pepper.

Really simple but utterly delicious:

Halve the courgettes, sprinkle with a little olive oil, chopped rosemary and ground coriander, grill until al dente.

courgette bhajis - make a bhaji batter (gram flour, chilli flakes, garam masala, salt pepper + water to make a thick paste) slice the courgettes and dip in the batter, shallow fry until brown and crispy - delicious!

Spring Chicken:
Chicken thighs, courgettes, celery, onions, stock, white wine, fresh tarragon. Cream if you want a more lush dish.

my lot didn't take to them, so i grated into lots of dishes so they didn't notice they were eating them. chilli, curry, stews etc.

I suppose in terms of preserving them you could either turn them into a kind of passata- cook until soft with a bit of garlic and rosemary, then blitz and either freeze or bottle; or you could finely dice then freeze them.

I make courgette cakes, courgette fritters (grated courgettes in a spiced batter and fried, freeze well) tons of ratatouille, and grate into spag bol. Have also made in the past a courgette relish which was nice.

i grate them, add lemon juice and olive oil, season, then leave marinade , then eat its lovely, i have it most days cos its so low in cals if you measure the olive oil

We have green spaghetti - if I call it courgette then visiting children won't eat it.
Julienne it really finely and sautee in olive oil with garlic.
