The courgette glut has started - recipes anyone

We hardly got any courgettes last year as they all dried out, so this year we went a bit mad and planted 13 plants. Of course they have all gone mad and we now have courgettes coming out of our ears. The chickens and guinea pigs get a big one each day, and we are eating them with almost every meal.

Anyone got any good recipes to jazz them up a bit, or ideas on how to preserve them?

Thanks everyone - I'm obviously not the only one with lots of courgettes!

In the last few days we have had - chicken and courgettes kebabs on the BBQ, pasta with cheese and cougette sauce (which was lovely), potato, chick pea and courgette curry (also lovely) and bean echilladas with added courgettes.

I'm definately going to try the mexican courgettes - thanks feelingfull.

I am hoping to get lots so i can try this
Courgette batons
3 large cougettes
100g breadcrumbs
20g parsley
115g parmesan grated
grated zest half lemon
2 eggs
plain flour to coat sunflower oil for frying
Wash and dry courgetes and cut into batons(in the pic they look like big chips)
Mix b'crumbs,parsly,cheese, lemon and s and p
beat eggs
dip courgettes in flour then egg then b'crumb mix
Fry in sunflower oil and drain on kitchen paper in a baking tray so you can keep them warm till all done

Slice and freeze - and then use as many slices as you need for soups, stews, casseroles etc...

TBH I'm not that sure I like courgette, but I love these.

I do a courgette bake - slice courgettes lengthwise and drizzle with olive oil, roast in oven

Layer cooked courgettes in a dish with mozzarella and passata, top with grated Parmesan. Bake in oven until golden and bubbling

It's not refined (you could not serve this to michel as we say in our house!) but it is very tasty and a bit like a simplified aubergine parmigiana

You need a couple of courgettes for Nigella's minestrone, which is the yummiest soup ever.

I am generally not mad keen on them, but a friend made a beautiful courgette quiche with wholemeal pastry and vintage cheddar cheese and it was truly lovely.

For the Courgette batons you can also cut them into julienne strips like shoestring french fries. They fry up really crispy with the coating given above and are wonderful served with some marinara tomato sauce for dipping.

Brie & Courgette gratin....slice, and shimmy them about in some hot melted butter, plenty of S&P

layer them in a dish with some really salty ham/pancetta (ideally I use the lidl black forest ham)

Poke in bits of brie, or just put a big wodge on the top and then pour on some double cream or creme fraiche ....not so much as you would for a potato gratin, i guess because the courgettes are more watery they melt down.

If you went with the brie poking method then also put some grated cheese on top before it goes in the oven. Nice hot oven for 20-30 mins till it's bubbling like mad!! :D
