Almond and vanilla filled with chocolate ganache.

blueberryboybait · 11/06/2012 20:11

I do a nutella with Baileys butter cream is loved by adults. With kids plain vanilla/choc work best as they are all about the icing - the more colourful the better. As a generic everyone loves them cakes vanilla with fresh strawberry buttercream and chocolate with chocolate icing and hidden raspberry in the cake and topped with a raspberry.

PuppyMonkey · 11/06/2012 20:12

Exogenesis · 11/06/2012 20:20

Yummy Lavender ones....

spamm · 11/06/2012 20:21

Red velvet or carrot cake - Yum!

MaureenMLove · 11/06/2012 20:22

Chocolate cakes with peanut butter icing. My favourite flavour of the moment. Although, for safetys sake, I probably wouldn't do a peanut based one.

taytotayto · 11/06/2012 20:22

well i class a cupcake as being a posh bun decorated all fancy. but thats just me. i suppose its a bun really.

akaemmafrost · 11/06/2012 20:24

Lemon

OliviaLMumsnet · 11/06/2012 20:26

ooh peanut butter icing, recipe please.
That counts as lowcarb, non?

MaureenMLove · 11/06/2012 20:30

Yeah right, I'm saving that baby for a possible prize winning entry Olivia! My recipe won me a holiday to Zante on here, about 4 years ago! WinkGrin

I kinda make it up tbh, but this is where I started I think.

MissBeehivingUnderTheMistletoe · 11/06/2012 20:43

Pimms cupcakes with strawberry, orange, mint and cucumber icing. Fiddle but delicious.

SecretNutellaFix · 11/06/2012 20:44

Orange sponge with a chocolate ganache icing

DamnYeToHell · 11/06/2012 20:48

Ooh perfect thread. I'm making cupcakes for the first time tomorrow for a friend's birthday.

blueberryboybait · 12/06/2012 11:25

Taytotayto - it is very simple, I do 3 eggs, 6 flour, sugar, butter and 3tablespoons of nutella all wizzed together in the mixer, into cupcake cups, baked at 150 for 18-20mins. Baileys buttercream is 150g butter and 4tbsp baileys beaten together until butter is soft add about 400g (you may need a little more) and beat until smooth and fluffy. Eat with a spoon!

ChopstheDuck · 12/06/2012 11:27

red velvet, or rose

nannycook · 22/06/2012 21:45

Ooo blueberry, just saw your recipe for bailey and nutella cupcakes, thats ones i'm gonna have to try.

HolofernesesHead · 22/06/2012 21:51

Blueberry, do you really bale them at 150? Is it a fan oven? Seems v low to me...but I've never made cup cakes :)

twolittlemonkeys · 22/06/2012 21:53

Red velvet or carrot cake. Got to have lashings of cream cheese frosting on though, I'm really not fussed about buttercream.

nannycook · 22/06/2012 22:00

it does sound low but i also have a fan oven and things are generally cooked 20degrees less, blueberry may have an aga tho, different again i guess.

nannycook · 22/06/2012 22:02

I normally cook my cupcakes on 160 fan for 20mins ish and more important middle shelf.

Viviennemary · 22/06/2012 22:02

I've never made cupcakes. The peanut butter icing ones sound yummmmmmmmmmm. Also the Baileys ones.

blueberryboybait · 22/06/2012 22:04

Yes I do, 170 in normal oven 150 in my fan, which has various hot spots so any hotter and I end up with some overcooked ones.
