i menu plan & have lists of what is in my freezer/cupboards so i can see what we have got at a glance.
I only plan 5 meals tho, as we usually have left overs from another day or only fancy butties of something light.
We definatley have at least 1 cheats tea a week, when very little effort is required.........

Special eggs - scrambled egg with mushrooms, red pepper, onion & chorizo sausage. Sometimes I chuck in a few diced spuds too to bulk up.
Lazy Mums Pie - Bought in Shortcrust pastry, lots of mashed potato, one or two tins (depending on how big you`re making pie) of GOOD stewed steak in gravy. - Use a deep pie dish, good layer of mash on bottom, open tins & gently heat , seive to seperate meat & gravy, spread meat on mash, top with another layer of mash & put pastry lid on, egg wash & bung in over for 25 ish mins till pasty done. Make instant gravy but add tin gravy too to jazz it up a bit. We serve this with beetroot or pickeld cabbage. very nice very easy.
Cheats Pea & Ham Soup - Coppped onion & garlic (and any other veg hanging around) half (depending on amount making....) bag of frozen mushy peas, chicken stock & chopped ham bits. I often freeze a good handfull of off cuts after roasting gammon & use this, but any ham or bacon will do. bung all in pan, thin out & season to taste.
Cheats Bean & bacon soup - ham as above, but smoked bacon is lovely with this, onion garlic (other veg) paprika & tin(s) of mixed beans & veg/chicken stock. fry onion, garlic, ham/bacon & paprika, add other ingreidients, cook & simmer for 30 mins.
