Help! Other things to do with pumpkin - not soup!

I have managed to grow a zillion pumpkins on my allotment. Pumpkin soup is lovely but we're sick of it already. Any other ideas? (yes, I'm well set for halloween....

I make pumpkin pie alot. have really easy 'quick' recipe (nothing involving chopping a pumpkin is that quick!!) we love pumpkin pie here.

LOL laligo - that takes me back! You can guarantee they will eat ANYTHING if found squashed on the carpet, but present the little darlings with something organic and healthy you and you end up wearing it!

um nope, with that much cream in pie cant be freezable. and how long does it keep? we eat it that night! but keeps a few days in fridge.
will go find recipe now for you.

pumpkin pie

pumpkin puree (from a small pumpkin)
2 cups single cream
2/3 cup light brown sugar
pinch salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp cround cloves
tiny pinch grated nutmeg
2 eggs

short crust pastry
pecans blitzed in food processor (you need enough to cover base of pie pastry)

line pie dish with pastry and bake blind.
sprinkle pecans across base...enough to make a 'layer' iyswim.
beat together puree, cream, brown sugar and spices, salt, eggs.
pour mixture into pieshell and bake for ten minutes on 220c reduce heat to about 180c and continue baking til filling is set and just turning brown slightly.
let pie cool in pan. serve hot or cold.
can be reheated,and for all I now frozen too, but we eat our v quickly!
this makes about two pies btw.
and there are some fantastic recipes for it online, but this is the quickest simplest one i have found.

Hollow one out and cook a seafood stew in it, or several mini ones and cook individual stews in them. It looks divine!

i made bacon and pumpkin pasta the other day - basically fry bacon, add pumpkin bits fry bit more, add to cooked pasta with parmesan. Was yummy
Are good recipes on bbc/ food - a few with pumpkin - you can also search on butternut squash and subsitute with pumpkin

Here's a great tip I learned recently. Roast the pumpkin before putting it in the kormaaaaaaaa. Yummmmeeee!

Also I use Pataks Korma paste (NB. NOT the sauce because that's yuk)
Fry some veg (ground almosnds if you have them), add paste, fry a littel more, add tin of toms/ roasted pumpkin and some water and stock,(add quorn if you like. Also coconut cream), simmer for ten mins. Add cream and serve.

Having planted this seed in my brain, I'm now obliged to make it for myself when I get home from my class tonight.

Nigella has a lovely pumpkin cheese cake recipe, in Feast.

All the dessert recipes start with pumpkin puree, essentially, roasted and sieved pumpkin. You could roast pumpkin, sieve it, and freeze it, ready to make anything sweet, or soup?
