Paella

I am making paella tonight and the recipe calls for saffron which I don't have the local supermarket doesn't stock.

Can I use paprika or doesn't it really matter?

Turmeric will give it the yellow colour, I'd use that.

tumeric will give the right colour but the flavour is completely wrong!. I'd leave it and make sure that you've got plenty of other flavours (garlic, good stock, smoked paprika etc) so that the rice is not too bland

I have proper Hungarian paprika and I have made fish stock.

I have never made paella before which is odd as it is one of my favorite dishes.

Any tips are welcome!

Paprika goes in a paella anyway.....in the absence of saffron, turmeric is fine.

i'm not exactly a super taster, but i do love paella, and make it often, and don't think the lack of saffron is going to be a problem.

oh, and i use smoked paprika in mine which gives it a good kick and the right yellowy colour
