Im not sure what I want from it but I do know that I am struggling a bit and need some help. Things from the past are flooding my head and would be very useful to have some help with that, I feel it would also help in allowing me to further tackle my eating problems. I would ideally like to attempt to come off antidepressants next summer but need to tackle this first.

What should I say? How much detail am I supposed to go in to with her? Bit confused really.

do i gather that you think some sort of counselling would be useful? afaik they are supposed to ask you about counselling if they prescribe ad's so it would be well worth having the conversation. CBT can work wonders with eating issues, perhaps look into that?
Start with the main points and assess whether the gp is 'getting your drift' - if not then explain a little more and ask for what you think you need. All counselling / psych referrals take quite some time so be prepared for a bit of a wait. Hopefully you should get an assessment appointment and even if the gp isn't sure what type of treatment/support you need, then the psych/counsellor can send you in the right direction once you are 'in the system' as it were. hope i make sense
