Can anyone recommend an exercise which will shift back/ side fat? I've just joined a gym to get rid of 5 years accumulated teaching fat and am doing cardio, swimming and weights but none of these seem to touch that specific area.

Have a word with the gym staff and ask them which of their machines target your lats. Typically pull ups (on the assisted pull up machine if you have one), using the lat pull down machine or cable, rows (particularly inverted rows) are all good. They might be able to show you some other stuff with dumbbells/barbells as well. You can't spot reduce fat, but building some muscle in your back will help and is super good for you anyway.

I was going to ask the exact same question!

Kettle bells will give you an all over work out and if you can find a class even better. As pp says you can’t spot reduce

You can't spot reduce fat. By all means target the area because toned muscles improve aesthetics, but you will need to be in a calorie deficit and be patient.

You need to be in a calorie deficit to lose body fat, exercise will help but largely diet.
If you want to strengthen your back you need to do push ups, pull ups, dumb bell and bar bell rows. but you won't see any muscle tone until you lose body fat.
