What to serve with lamb on Christmas day

First time having lamb on Christmas day so want it to be a little more special than the usual Sunday roast fare. So! Looking for suggestions for sides that I can buy or are easy to prepare.

But...

DH has allergies. He has serious allergies to peas, sweetcorn, green beans, mange tout; basically anything in a pod.

Any ideas gratefully received!

I like the idea of upgrading something like broccoli for the long stem broccoli.

Pomegranates sound amazing with lamb. Any tips??

I am in love with the idea of courgettes with a crust 😍 Don't suppose you have a recipe please?!

Delia Smith’s braised red cabbage. It’s special, Christmassy and a crowd pleaser. It can be made ahead and reheated, it freezes beautifully and it’s really simple to do.

I do the courgettes by mixing panko breadcrumbs, parmesan cheese, salt and pepper (and sometimes parsley if I have it) in a bowl with some olive oil. Then dip the rounds of courgettes in the mixture and bake for a bit on parchment paper - parchment paper makes the difference.

You could also do a yogurt/cucumber/dill sauce and grilled pita bread for a slightly greek take on the lamb.

I find lamb can be quite fatty tasting so prefer potatoes to roast potatoes. Making them "hasselback" potatoes is really easy, look nice and can be very tasty either plain with some sea salt or sprinkled with your favourite spices or herbs / chillis etc.

I usually do a big tray of roasted carrots, peppers, courgettes, sweet potato, butternut squash, onions. Prep and cube it all the night before, put it in a zip lock bag with a spoonful of olive oil, a couple of cloves of garlic, salt and pepper and some rosemary. Give it a good shake. Keep it in the fridge overnight.
Tip it out onto a big tray and shove it in the oven for 20 minutes when you take the lamb out to rest.

With the courgettes..I just mix parmesan with breadcrumbs and a dash of cayenne pepper or paprika. I cut the courgettes lengthways so they're kind of like chips/wedges. I dip in beaten egg, then the breadcrumb mixture. Bake in oven drizzled with olive oil .

I marinade the lamb in red wine then roast it on a trivet. I remove all the fat from the juices because I don't like the taste or texture of it. It makes a big difference to the end result.
