What are my fellow vegetarians and vegans eating this year
I'm having Mary Berry's nut loaf
All the usual accompaniments
Rice pudding - less stodgy

OP posts:
FourSeasonsTotalLandscaping · 24/12/2021 17:48

My veggie husband has made himself some kind of wellington: veggie haggis wrapped in pastry with a mushroom and chestnut paste under the pastry.

Yogateacherherehello · 24/12/2021 17:59

Mary Berry nutloaf
A stunning vegan gravy with miso that some kind person here gave a recipe for (I've tweaked it by adding oregano and a stock cube)
Celeriac mash, roasted carrots, sprout gratin, veggie roasties, spicy red cabbage.
Home made veggie Christmas pudding.

dingit · 24/12/2021 18:02

Dd quite happy with Richmond sausages 😂

Melassa · 24/12/2021 18:11

Ordered in a huge selection of meze from our local Turkish restaurant. Will also be preparing roast potatoes and roasted sprouts and maybe Yorkshire puddings, just to keep it vaguely Christmassy (not that anyone will notice except me, we are abroad, DP is foreign and doesn’t understand British Xmas dinners). I thought I’d spotted a parsnip in the supermarket today and got all excited, only to discover it was in actual fact horseradish Shock

LynnInAVan · 24/12/2021 18:12

Lots of aldi vegan food! Roast, pigs in blankets, gravy, mash, garlic roasties, green veg, cauli cheese made with cashew cheese sauce

AwkwardSquad · 24/12/2021 18:16

We’re having a butternut squash and chestnut roast with braised red cabbage, potatoes, broccoli, carrots and maybe peas - not decided on all the veg accompaniments yet but those are the veg we have to choose from - M&S vegan gravy, and homemade beetroot chutney

AwkwardSquad · 24/12/2021 18:17

@Melassa a huge selection of meze sounds amazing!

Melassa · 24/12/2021 18:21

Yes, one year I made a variety of meze for NYE for friends who were coming round and it was a huge success. This year I can’t be bothered to cook at all so have thrown money at the problem. We always have loads of leftovers too so can keep going for a couple of days with minimum effort. Then I will make a mushroom lasagne when it all runs out Grin

GMH74 · 24/12/2021 18:31

Potato, cheese and onion pie. I didn't put egg in it because whilst I'll eat cheese, I hate eggs.

withiceplease · 24/12/2021 18:47

Please can someone link or screenshot the Mary berry nut loaf? Googled and there's more than one and one has low ratings. If 2 of you are doing a particular one for Xmas, I'm presuming it's v good
Thank you

I got a vegan beetroot nutroast thing in Lidl. DH has a small ham joint. We will have the same potatoes, sprouts, carrots and I am making a vegan cauliflower cheese. I have made leek and potato soup to start. DH is happy with vegan sides, so we don't use dairy/fat in them. Dessert, we got individual pots. Just the two of us here so didn't get too much

deadlanguage · 24/12/2021 19:34

Christmas day I’ve got melon, followed by M&S nut roast and vegan pigs in blankets and the rest of the trimmings, then Christmas pudding and a couple of vegan cheeses for the cheeseboard Xmas Smile

Boxing Day I’m making a beetroot and red onion tarte tatin and have got Lidl churros for pudding 😋

PastMyBestBeforeDate · 24/12/2021 19:36

Extra roast potatoes and stuffing for me. I will be very happy.

wheresmyhairytoe · 24/12/2021 19:39

Wicked kitchen "turkey" roast for DH, gluten Free vegan wellington for me, plus all the trimmings.

wheresmyhairytoe · 24/12/2021 19:39

Ooh and a GF vegan cheesecake for pudding.

Yogateacherherehello · 24/12/2021 19:40

It freezes well - I made mine a few weeks ago.

WhatsMyNameGonnaBeNow · 24/12/2021 19:42

We’re having mushroom wellington with onion gravy, roast and mashed potatoes, roasted carrots & sprouts, steamed broccoli & cauliflower. We don’t have a starter but have a selection of desserts. Cheeseboard & wine in the evening for me and DH.

Juanbablo · 24/12/2021 19:44

My brother and I are having a nut roast from Waitrose and some little veggie sausages that have apple in them. It all looks nice so we will see. I usually have the individual Lidl nut roasts but didn't go there this year.

Sprouts

villamariavintrapp · 24/12/2021 20:40

These all sound wonderful. We've been covided, so plans cancelled and no delivery slots etc, so probably be having some rice from the cupboard. Got mulled wine though.

thinkfast · 24/12/2021 20:44

I'm making this

www.bbcgoodfood.com/recipes/jewelled-squash-chestnut-mushroom-wreath

It was delicious last year. However this year I'm making it in a loaf shape to save oven space. I'm guessing the cooking time. Fingers crossed it turns out ok!

toastofthetown · 24/12/2021 20:47

Inspired by Mumsnet I’m having Delia’s parsnip roulade. I made it today and it small amazing so I have high hopes.
