Would anyone be up for a coeliac chat thread?

Umm...that's it, really! I was thinking a thread for people with coeliac or a coeliac sufferer in the household where we could share recipe ideas and any other questions might be helpful. I did briefly follow something like this on FB but found it a bit intense, as FB groups tend to be!

My DD (12) has coeliac, diagnosed last year. Still getting to grips with some food alternatives but we have quickly found specific favourites (all in different supermarkets, of course!)

So my first question is...any ideas to make GF couscous a bit more flavoursome?!?

@Wallingtonhall I get really weird back of head occipital neuralgia with neck pain for hours if gluttened (about 10 hours later) and a weak wobbly leg- but no stomache issues - it's really odd

I had a pleasant surprise yesterday in a Cook shop - not only do they stock quite a range of GF foods but their labelling is brilliant with a clear GF circle on the front of the pack, rather than having to squint at the list of ingredients on the back of the packaging

I bought the chocolate roulade for a family dinner and no one guessed it was GF as it was so tasty

Chocolate roulades are traditionally gluten free as it's a flour less sponge

@atlaz there’s a great recipe for GF gnocchi by ottolenghi in the simple book. It’s corn based.

I made ricotta gnocchi a few weeks ago, used a bit too much flour but that was my mistake for not measuring, but was alright, just not as light as it should be.

COOK do a fabulous G & T Semifreddo that is gluten free. Agree their labelling is fab.

I’ve visited their kitchen in Kent. They are fastidious about provenance and keeping allergens separate.

Hi all, was hoping there would be a thread for coeliacs. DS who is almost 13 was diagnosed at the end of last year, after about 2 years of fatigue and gastro issues and I’m finally starting to feel like I have a handle on our new GF life. Unfortunately, he has already been glutened a few times since diagnosis once from his inability to resist chicken nuggets and the other times from cross-contamination which were hard but good lessons to learn. Will read through properly later but wanted to make sure I can find this thread again later!

Hi @Twotooto m&s do gf chicken nuggets and I think there are “accidentally” gf chicken nuggets in Aldi as well. Dd is vegi so doesn’t eat them but I eat the Aldi ones occasionally and they’re nice. I appreciate that doesn’t help if he’s out and about or wants a McDonald’s!

@Twotooto M&S GF fishfingers in freezer section only are nicer than the none GF ones- I get through lots!!

Thanks, we have GF chicken nuggets at home, and thankfully we live really close to an M&S foodhall, it was the ones in the school dinner hall that he couldn’t resist!! The struggle for a packed lunch he likes is real though, he didn’t really like sandwiches when he was still eating bread with gluten in never mind with GF bread.

What I do really appreciate with M&S is that they include the GF chicken options in their offers and also seem to not throw random bits of gluten into food that doesn’t need it less often than other supermarkets and brands.

I saw some gluten free pasta in the normal section at Sainsbury’s today, red lentil and buckwheat varieties. I haven’t tried it yet, it was £1.70 a pack

@Twotooto does he like hummus? I know myself at lunch I eat nairns cheese oatcakes and hummus or salsa - also babybels, frittata, falafels, (check details) -

My daughter much prefers GF rolls instead of bread (unless toasted), especially the Warburtons rolls. Lunchboxes are tricky here too.

Mine too! We sometimes do cheese and crackers in her lunch box too. Or I make some.gf savoury muffins and freeze them.

These are all good ideas but he is honestly just so fussy I don’t think he’d eat any of them 😭

He is getting a bit better at eating new foods but as he got sicker and sicker he just stopped eating very much at all, with lunch being one of the biggest casualties.

Food can be such a sensitive subject, especially when your child struggles to try new things. I've had to make my peace with it and try to ignore a lot of the advice I'm given. The favourite old nugget of wisdom is to add secret veg to sauces... but what if they won't/can't eat sauces?That's not helpful for us. Homemade smoothies are a better idea here. All kids like pizza and pesto pasta, right? Nope.

The five a day advice piles on the mum guilt too. It's not that we aren't trying! I've been thinking a lot recently about the more recent studies that show it's best to eat 30 different types of plant through the week, including things like peanuts and oats. There's a lot more scope there for increased nutrition, as I can do more recipes with (GF) oats that might actually get eaten.
