Would anyone be up for a coeliac chat thread?

Umm...that's it, really! I was thinking a thread for people with coeliac or a coeliac sufferer in the household where we could share recipe ideas and any other questions might be helpful. I did briefly follow something like this on FB but found it a bit intense, as FB groups tend to be!

My DD (12) has coeliac, diagnosed last year. Still getting to grips with some food alternatives but we have quickly found specific favourites (all in different supermarkets, of course!)

So my first question is...any ideas to make GF couscous a bit more flavoursome?!?

@Twotooto my daughter is t the same. She only eats bread/roll with fish fingers so not really possible for school!
she makes herself cheese scones and I make sausage rolls (Jus Rol pastry and any deluxe sausages, Lidl are GF) and she has one in her packed lunch

It’s ok, it doesn’t puff up as much as normal pastry & it leaves the sort of film-y feel in your mouth like the bread does but with decent sausages they’re pretty decent.

That's definitely useful to know, thank you! I make my own GF shortcrust pastry for jam tarts but it's a bit too fragile for something that requires more structural integrity!

I’ve not tried making pastry, I’ve got Becky excells books so I could but I prefer to pay for convenience & probably better quality 😆

Yes, this is basically what he had yesterday!! It doesn’t feel enough for a growing, quite sporty boy but as he told me yesterday that’s more than he used to eat. I’ve sent him off today with some gnocchi tomato sauce & mozzarella in a food flask - hopefully it will be eaten.

Bread, cake and ciabatta rolls from the loopywhisk site. Once you have the basic flours it’s pretty straightforward.

The psyllium husks make everything much more spongy and soft. The gums give me stomach ache so I don’t use them. You can just use shop bought GF flour for her recipes I think, I don’t because I can’t tolerate the nightshades and most commercial GF stuff is 50% potato! So I’m really grateful for her recipes.

For some reason jus rol pastry gives me raging gut ache. But I can eat home made.

I like making quark and butter pastry, its a lot easier than puff pastry as you don't have to rub in cold butter but you can roll it in layers and works out alright for sausage rolls and pasties.

Potentially saved people from accidentally consuming gluten today. Went to the shop and was checking the gluten free section (which had a sign saying gluten free, and everything else on the shelves were gluten free) and there were ordinary biscuits there. They were a brand that do a lot of gluten free stuff so I could see why the mistake was made but they weren't gluten free. Pointed it out to a member of staff who took them away but that is pretty bad that they didn't check properly before putting them out.

I've seen Nairns regular oatcakes in the gluten free section, they're very similar colour boxes too so could easily be missed.

They had the ones on the right in the gluten free section. I use self scan so noticed they were way too cheap!!

Interesting that those rough oatcakes don’t list anything with gluten in the ingredients but does anyone want to risk trying them 🫣

@MarchHares my understanding is that the standard oats that those are made from are not guaranteed to be gluten free, the gluten free oats are grown and processed separately to avoid contamination. I certainly had a bad reaction to some flapjacks that a friend made with non gluten free oats.

@MarchHares the rough oatcakes have this statement We cannot guarantee that our ingredients are Wheat and Nut free.

I saw some gluten free pasta in the normal section at Sainsbury’s today, red lentil and buckwheat varieties. I haven’t tried it yet, it was £1.70 a pack

I shall have to try those. I like red lentil pasta but the one I get is fusilli which just disintegrates before it's cooked in the middle.

As far as I know I might be "just" gluten intolerant as I trialed giving it up after years of issues, just for a couple of weeks but ended up in so much pain when I put it back into my diet that I came straight back off it, again. I'm also lactose intolerant and histamine sensitive - in particular I cannot eat citrus at all, any more - and despite what others have said, there seems to be very few gluten free options that are also dairy free. Of all those lovely cakes and biscuits in the Made Without section in markses, the only ones I can eat are the packets of digestive crumbs (because they're always smashed to smitherines)

I'd got out of the habit of eating much bread and the ones I eat now tend to be the seeded varieties which offer more protein and fibre than other GF options and get nice and crispy in my sad little toaster! I always have those little Spanish tortillas in my fridge for those days when I want a quick lunch. If I've been out anywhere, it's not unusual for me to get home at 3pm having not eaten since 7am so being able to nuke one of those when I get in is invaluable.

I learnt from reddit thst some of the Tesco sushi is gluten free so I shall definitely be trying that if I go anywhere with one that's convenient.

Oats that aren't certified gluten free have often been processed in the same mills and factories as wheat so definitely not safe.

That makes sense about the oats being contaminated, I actually can’t have any oats so it hadn’t registered.

Just thought I would make others aware that Sainsbury’s chocolate bean cake decorations have Barley Malt in which I wouldn’t have expected

I am irritated by people who tell me they understand Coeliac with such authority and if I question their knowledge (politely) before I eat the food, find they know little to nothing, but with a wave of their hand assure me it's all 'gluten-free'. Just shut up and stop trying to persuade me that the food is fine. I will make that judgement.
