I’ve She’s got truffle brie, Boursin, manchego, extra mature crunchy cheddar… and oatcakes, cream crackers and cheddars.

Totally acceptable to open a new bottle of red to stay hydrated, yes?

You absolutely should make Welsh rabit, I am not sure cream cheese would work but all of the others will inc the rind off the brie and such like will work fine.
Chop it all up roughly and fairly small, beat in enough egg to very generous coat it and a healthy glug of Guinness or white wine , you want the mix to be thick but almost pourable, add some finely chopped spring onion/ shallots/ bog standered onion , plenty of black pepper ( no salt there is enough in the cheese)

If you have a proper grill toast one side of bread ( older bread works better ) very lightly toast the 2nd side then dollop a few tablespoons of the mixture on and grill untill lava hot.
If you don't have a grill butter two slices of bread on all four sides lightly fry one side of each in a very hot pan put the mix on the fried side of one slice plonk the other slice on fried side on the cheeses then fry the outside of the sandwich on both sides.

Don't blame me if you burn your tongue!

Making this with cheese bought specifically for it!! YUM!!

My friend was EXTREMELY lethargic at the gym yesterday (as was the rest of the class) and is now at her delightful in laws for round two, leading into NYE…

MIL arrived for Christmas with:

Mature cheddar
Baron Bigod
Oxford Blue
Port Wine Derby
Jarlsberg
Binham Blue

Plus oatcakes, wheat crackers, rosemary crackers, walnut and honey crackers, and chive and sea salt crackers.

We had some for lunch and will have the same this evening along with pork pie, bread and butter, and smoked trout. There is no 'too much', only a lack of ambition 😁

And @IfNot things like camembert keep maturing after you buy them, the sooner you bake it the sooner you'll exorcise the cheese demons from your kitchen.

Would your MIL consider adopting a slightly chubby but usually friendly 50 something Scotswoman? Asking for a friend …

There is never too much cheese. I am struggling to find Stilton in mainland Europe, but I have raclette and boiled potatoes.
