Most podcasts are very poor quality. Anyone and his dog can have one. Whether they should is another matter.
Part of this is true. It is very easy to start your own podcast and it is definitely something which not everyone is good at. Some of the low-budget ones I listen to (mainly about history/heritage) are really good not because they have amazing production values and hi-tech studios, but because the person cares about their topic, is very knowledgeable and communicates well.
But "most" being very poor quality? That's just not true, many of the big TV/Radio organisations around the world make their own podcasts like BBC or Sky News or New York Times. Then there are the other brands which just make podcasts - iHeart, Wondery, Goalhanger. There are a lot of podcasts i'm just not interested in the topic, but that doesn't mean they are poor quality.

British Scandal (Wondery) - dramatisations of scandals like Lord Lucan, the Salisbury poisonings, The Peru Two...
Death in Ice Valley - co production between BBC and Norwegian broadcaster about an unsolved mystery which is absolutely fascinating
Assume Nothing - BBC N Ireland podcast with short seasons on a specific story.
Marianna in Conspiracyland - again several stories, all looking at conspiracy theorists.
