Favourite lazy arse dinners

As per title. Tonight I have a plate of pasta (fusilli) with butter melted through and cheddar cheese on top. Teaspoon of lazy garlic mixed through with the butter. When I’m being less disgusting I melt butter and a little garlic into the fusilli, add tuna or chicken and basil, and squeeze a lemon over. But the ultimate lazy dinner is literally a heap of pasta covered in cheese.

What are your ultimate lazy arse dinners?

Taco salad - lots of shredded iceberg lettuce and grated carrot mixed with a little mayo then topped with mince cooked with fajita seasoning. Chuck on some grated cheese and salsa and scoop up with tortilla chips. It only takes 5 to 10 mins so lazy for me and is great in this weather.

Mash Direct cooked cabbage, individual serving of their mashed swede or carrot/parsnip, veggie fillet. The bonus of being extremely sluttishly lazy AND still reasonably healthy.

Pasta with a tin of spicy mackerel fillets mixed in - 15m meal and tatses heavenly.

Also, oven baked chicken nuggets with microwave rice and a squirt of sweet chilli sauce and served with any veg or salad lying about. 20mins. Heavenly and like a healthier sweet n sour!

Sad to say but I have rediscovered Sweet and Sour pot noodles. We never had processed food back in the day and mum bought me one when it was Chinese New Year at Guides and we could bring in Chinese food to celebrate ( circa 1984?). So a massive treat.
Haven’t had one in years but bought one as emergency lunch.. I now have two in my cupboard as we speak, waiting for another moment of weakness.

Tonight I had a cheese sandwich…..not even real cheese but one of those plastic looking cheese slices.

I’m partial to a crisp sandwich too or just toast with some grated cheese sprinkled on top.

Bag of broccoli, with a tbsp on cream cheese mixed through, a few slices of cheddar on top, microwave. Add a dash of salt and liberal amount of pepper. Eat.

One of those microwave bags of rice fried in a pan with a beaten egg and some frozen peas, maybe even some frozen prawns too if I have them: Instant egg fried rice. Serve with some soy sauce drizzled over.

Filled pasta (mushroom tortilini today) with a quick sauce of butter, lemon zest and juice, finely chopped shallot (or onion), garlic, capers and flat leaf parsley, all things i usually have.

Pre made sticky rice from a packet, warmed up - I fry it but it can be microwaved. Pre cooked salmon fillet, cooked from frozen edamame beans, half an avocado with some black sesame seeds sprinkled on top of it all. Add some kind of Asian sauce - eg sriracha, soy sauce, some sushi ginger etc. It takes less than 10 mins but really yummy & healthy 😍

sprinkle of paprika

I learnt this from another thread on Mumsnet!

Block of feta and a tub in cherry tomatoes drizzled with olive oil in the oven for 20 minutes

Cook pasta

Mix the lot together and stir some fresh rocket through to serve

Boursin also works well for this!

Also when I'm absolutely broke and its just me and the kids I do basic sausage pasta..its a couple of tins tomatoes, a whole onion top and tailed and a nob of butter simmered for about 2 hours. When the onions soft blend it all, meanwhile bungalow sausages in the oven, when theyre cooked cut them into chunks, shove it in the sauce and have with pasta. I like it cos you use hardly any ingredients and you can leave the sauce for hours simmering on low while you watch tv

Now it’s a chicken or salmon traybake. Put a load of root veg or Mediterranean veg (including halved new potatoes), olive oil, whole garlic cloves and herbs in a baking tray. If it’s chicken add at the beginning. If salmon add the fish 10 mins before the veg is done. You can add lemon wedges, paprika, chilli flakes or other spices to taste. Roast in a hot oven. One pan cooking at its finest!
