A sharp or even mild cheddar does not belong on top of an authentic Lasagna..

DH is calling me fussy and that I’m turning into my bat shit mother who will only eat straight chips because I am protesting that the flavours don’t go.

It’s doesn’t even melt the same FFS.

We call it toy cheese. The cousins like toy cheese, we like extra mature cheddar. My niece complained to my brother that our cheese was "too bitey."

But not on lasagna, it's mozzerella and parmesan on that. I'm with OP.

I'm very confused.

Sharp cheddar and straight chips suggests an identity crisis.

If you're American then presumably you are replacing the bechamel with ricotta so whatever you top that abomination with is irrelevant.

If you're British then surely mature cheddar on everything is the correct answer. Adding parmesan and dried oregano as well is also obligatory in this house.

I use mostly grated mozzerella on the top with a small amount of cheddar as well. Parmesan in between layers. I've used fresh mozzarella sliced up in between layers before as well that's also nice.

We use Cheddar because most Parmesan is not vegetarian.

My mum is a genuine Italian nonna and she uses a bit of cheddar in with the mozzarella when she makes lasagne.

I eat toy cheese mostly, because it doesn't trigger my migraines like the mature stuff does. It is very bland but it can't be helped.

She also uses half quorn half beef mince which is a bit odd but really works to make the lasagne not too 'heavy'.

I’m with you. Both on the lasagna and the chip flavours. Don’t get me started on the ‘fashionable’ afternoon teas offered these days that include croissants, brioche etc instead of good old finger sandwiches.

The only cheddar you should ever use in anything is Quicke's Farmhouse, preferably bough directly at the farm!
Lasagne, parmesan, not Grana Padano or any other substitute.
However, if this really a serious point of contention, just rename the dish as pasta bake?

I use a mixture of mature cheddar and mozzarella plus parmesan. And horrors of horrors use a cheese sauce instead of bechamel. Actually mine is not really lasagna but a recipe by Delia where you mix the ragu with cooked penne pasta and sauce as stated I use cheese. Put into lasagne dish and put cheese on top then pop into the oven. Very similar. Has always gone down a treat.

I’m definitely not American, Ironically I live very near Cheddar Gorge, however I didn’t realise describing a strong Cheddar as sharp was such no-no!

DH is cooking under my watchful eye as of yet no cheddar has made a disappearance!

What are you all talking about. You have cheddar and then put mozzarella in any cheese gaps that still exist. Because cheese gaps are a big no no.

If DH is cooking, he can put cheddar on it. Don’t turn into that woman whose DH never cooks anything because you just tell him he’s got it wrong. If you are cooking, you put whatever you like on it and if he tells you you’ve got it wrong, LTB.
