What cheese do you use on your lasagna top?

Boring question alert 🚨

Had a 10 year old admonish me for using cheddar cheese last night! Her mother only uses buffalo mozzarella and Parmesan don’t you know.

I’ve always just used whatever cheddar we have knocking around as I really don’t like the after taste of Parmesan and find mozzarella bland. I know it’s not authentic

i think my lasagna is gorgeous.

tiny bit of cheddar goes in the bechamel as well

The strongest cheddar I can find and then add Parmesan at the table.

Cheesier the better!

AllProperTeaIsTheft · 30/08/2024 13:06

Parmesan. No cheddar or mozzarella.

Margot2020 · 30/08/2024 13:06

An authentic lasagne is made with béchamel sauce, no cheese topping at all. So mozzarella isn’t authentic either, but I suppose at least it’s Italian. Like all Italian cuisine, British versions are quite different, but at least a cheesy topped lasagne is tasty, unlike some of the bolognese abominations you hear about on here!

LondonQueen · 30/08/2024 13:07

I use mozzarella and grated cheddar to top it off, parmesan is available too. I love cheese…

Idontjetwashthefucker · 30/08/2024 13:08

Don't like parmesan, it smells like feet, so it's strong cheddar all the way here, there's always fresh parmesan though for people who like it and want to add it.

Mozzarella doesn't really taste of much so I wouldn't put it in a lasagne

Stirmish · 30/08/2024 13:09

Use what you like

But yes it should be mozzarella and Parmesan although ricotta is often mixed in

Flopu · 30/08/2024 13:09

Cheddar, I know it’s not the one that’s suppose to be used, but it’s the staple one in the house and it’s fine.

ouch321 · 30/08/2024 13:09

There are so so many different versions of lasagne.

That said too much cheddar can make dishes salty. I put some in the white sauce but not cheddar on top as well. Normally mozarealla or provolone if it's Italian week at Lidl as I don't see that cheese otherwise.

DappledThings · 30/08/2024 13:10

Mozzarella and some torn up pancetta.

BBC Good Food recipe.

SnowflakeSmasher86 · 30/08/2024 13:10

I use cheddar as I don’t like most other cheeses. Will use the stringy kind of mozzarella on pizza but don’t really love the white wet stuff.

(Hopes Italian grandparents aren’t rolling in their graves!)

shellyleppard · 30/08/2024 13:11

Whatever cheese is lurking in my fridge lol

I load my béchamel sauce with chedder and then use parmesan on the top layer before popping in the oven. Authentic lasagna, no, food of the gods, absolutely.

feemcgee · 30/08/2024 13:12

I make my DM's lasagne from a recipe she got from an old Shwartz spice book, cheese sause instead of bechamel and cheddar grated on top. I much prefer it to the one served in an Italian.

poetryandwine · 30/08/2024 13:12

My (Italian) recipe calls for a light dusting of Parmesan and I’ve never had complaints.

wandawaves · 30/08/2024 13:13

Mozzarella.

SequoiaTree · 30/08/2024 13:13

I think it's fine to cook meals to your own taste and not be authentic. I do the same as you. It's not like an Italian person is going to be standing there with a clipboard and have you arrested if it's not exactly how they make it.

KrisAkabusi · 30/08/2024 13:22

Mix of cheddar and mozzarella.

Aussieland · 30/08/2024 13:23

Parmesan in the cheese sauce plus as much as cheddar and mozzarella as I can fit in the pan on top

LadyMacbethWasMisunderstood · 30/08/2024 13:23

Never any cheese in my bechemel. If I have some Parmesn and/or buffalo mozzarella I will put some of both on top. I provide grated cheddar and grated mozzarella at the table for those who want it.

massistar · 30/08/2024 13:24

I use my Italian MIL's recipe which has layers of bechamel and mozzarella throughout and final layer is bechamel topped with grated Parmesan. (Which only smells like feet if you're using the manky dried packet stuff). No cheddar involved.

Bearbookagainandagain · 30/08/2024 13:25

I used to put grated gruyère or emmental as that's what we tend to put on gratin in France.
But now I don't put any cheese - just bechamel, I don't think it really brings anything to the dish.
Everyone can add parmesan and chilli oil at the table if they wish.

I wouldn't like cheddar personally, it's too strong for the dish IMO, so i would side with the kid on that one!

HighlandCow78 · 30/08/2024 13:25

Mozzarella and a sprinkle of Parmesan

Starlight1979 · 30/08/2024 13:25

Aw this thread has brought back memories of "do widows like lasagne" post that was on here not so long ago - very amusing😂

And to answer your question - parmesan in the bechamel sauce, torn mozzarella on top and grated parmesan added on top near the end.

DancingPhantomsOnTheTerrace · 30/08/2024 13:25

I make the lasagne with a cheese sauce, not plain bechamel, and then sprinkle cheddar on top. Maybe Parmesan if I have it.
