Your menu sounds lovely. How do you do the parmesan crusted cauliflower?

Thanks Pickle 🥰

I boil the cauliflower in salted water for about 6-7 minutes… heat oven to around 190C. Grate fresh Parmesan into a medium sized bowl & add bread crumbs & seasoning. I brush the cauliflower pieces with olive oil before plunging them into the bowl filled with the Parmesan mix. Place them in a lightly greased tray and bake for about 20 mins until golden crispy. So good !

We have ended up very beef heavy this week, due to the items that were on offer/reduced when I went shopping. We rarely have beef more than twice a week so it does feel a bit strange - but I'm not complaining!
Tomorrow, we are having pasta, veggies and meatballs.
Today, we had a beef and root vegetable stew with rye bread (used the slow cooker).
Yesterday, we had rib eye steak (reduced) with homemade chips, carrots and corn-on-the-cob.
Sunday, we had chicken cooked in one of those Nando's oven bags with roasted whole sweet potato and peas.
Saturday, we had homemade pizzas (dairy-free household so vegan cheese) whilst watching a sporting event live stream.
Friday, we had Thai yellow curry with jasmine rice and prawn crackers.
Thursday, we had jackets with tuna sweetcorn mayo and salad.

Really quick things and try and do a mix of things DD likes and new exposures (that she will rarely try).

On standard rotation is:

Veggie sausages, chips and beans
Tofu scramble, toast and tomatoes
Butternut squash based mac n “cheeze”
Soya mince, mash and peas
Fishless fingers, sweet potato chips and cucumber
Noodles with tofu and sweetcorn
Lentil soup with bread and marg
Vegan pizza with hummus
Tomato chickpea pasta (but she’s gone off that)

Attempted something new tonight, Refried bean tacos, rice and corn on cob, she ate the rice and corn only, but trying to repeat exposures.

glittereyelash · 16/07/2024 20:11

I'm on hols at the moment but last 7 meals at home were: lamb koftas and cous cous, steak sambo and chips, crispy pork stir fry with noodles, cod tacos and salad, bangers and mash, spicebag and curry sauce and last night before hols we had a meat and cheeseboard.

ScottishDora · 16/07/2024 20:13

We meal plan on a Saturday morning but this week we've had the following:-
Mon - carbonara
Tue - curry kit or simple cook kit
Wed - orzo
Thur - chicken pesto pianini
Fri - fajitas
Sat - pizza & nibbles
Sun - spatchcock chicken

We always have a few curry kits like spice girl or simply cook in the cupboard so we usually have at least one of them a week, and Monday is always some kind of pasta. We did hello fresh, a couple of times for new ideas.

sorry misread and put like my whole meal rotation list.

half the week it’s just me and dd eating, as dh works shifts. I sometimes eat with him and just give dd pasta pesto, peas and corn. she’d eat it forever. or it’s pizza or fajitas. mid week when it’s all of us it’s curry/rice dish, burgers or bolognase and weekend is like roast chicken or fish option normally if we don’t eat out.
