I will probably make some mackerel pate and have it on a baguette with salad and walnuts. Then a coffee and some chocolate

Tuna 'sushi bowl' with brown rice, avocado, cucumber and seaweed with sriracha mayo.

A ham and tomato toastie, probably with some crisps and a sliced apple. My fridge is looking depressingly bare, despite the fact that I feel like I live in the fucking supermarket sometimes!

I've had a mini wrap made using a mini Crimpet wrap and an air fryer.

Mini wrap layered with
Rocket leaves
Balsamic vinegar
Goats cheese
Red pepper
Caramelised onions.

I've got four sizes from the Crimpet range and the mini wrap is my favourite.

Oh you’re all making me so hungry! Sounds delicious.

I don’t know… I’ve got gestational diabetes and am finding it really miserable having to prick my fingers throughout the day (since 11 weeks) to track my sugar levels (all totally in range except the morning one)… I’m super hungry because I’ve barely eaten today. I’m putting it off so I don’t have to deal with the clinical aspect of every tiny crumb.

However, your salads are inspiring me… I’m going to go and make a salad. Thank you.

I’ve got GD too. Sending solidarity, it’s a bit of a misery!

I’m making a vegetable and mixed bean curry with rice. Had so many vegetables to use up.

Ladies these all sound so nice.... what I also find delicious for a WFH lunch is to buy a packet of frozen paratha from the world food bit of the supermarket, fry them, and then put some brie and chutney in it (or kimchi and cheddar if I have them in) and then fold over and fry in the pan like a quesadilla.... takes under 5 minutes and soooooo delicious.... also what is a Mumsnet salad ! !

We had a picnic with home-made (by my 10yr old grandson) coronation chicken and lettuce baguettes for grandson and me, sausage rolls, scotch egg for DH, crisps, mini millionaires shortbread bites and apple juice. Very nice indeed!

Tomorrow we will have a selection from a little bit of left over coronation chicken, a couple of chicken drumsticks, garlic sausage, lettuce, tomatoes, pate and cheese topped rolls. Apple pies for pud. A 'bits' meal from what we have in the fridge as we're going out for a Chinese meal tomorrow. (With grandson - afternoon on the beach then a meal.)

Essentially, if you ever dare to talk about healthy eating or mention that something comes in a big portion or you find something too sweet, you will be accused of being a competitive under eater!

A Mumsnet salad basically means competitive undereating. Completely baffles me and feel like you're walking on eggshells if you ever want to talk about health and nutrition!

I don't think it's those who mention health as a lot of the meals on here are really nutritious but I wouldn't say they're those competitive undereater mumsnetters.

It's more the "I could never eat more than 1 slices of pizza" and 'bird' like eating😂
