I will probably make some mackerel pate and have it on a baguette with salad and walnuts. Then a coffee and some chocolate

Massive MUMSNET SALAD! Woo hoo, do I win?

Will contain no more than half a tin of tuna or one boiled egg, plus homegrown veggies.

By eating this for lunch I can allow myself a steak boiled in cheese with a double portion of chips for supper, obviously.

Smoked salmon & cream cheese on krisprolls with some pickles, carrot sticks and leftover tzatziki, a cup of tea and an apple. Probably an orange too.

That'll be around 3pm, since I haven't had breakfast yet Smile

Meeting my friend for lunch at Zizzi (school holidays here) but have taken out red pepper and sweet potato soup from the freezer, and will pick up some nice bread to have with it for tea.

DS2 is working from home today so I'm making one of his favourites. Omlette with leftover new potatoes, bacon and cheese in it, and a tomato salad.

I'm planning on a coffee and the last of the tea loaf for afternoon break.

I had mushrooms and tomatoes on toast for breakfast so probably just coffee til dinner now.

Oh you’re all making me so hungry! Sounds delicious.

I don’t know… I’ve got gestational diabetes and am finding it really miserable having to prick my fingers throughout the day (since 11 weeks) to track my sugar levels (all totally in range except the morning one)… I’m super hungry because I’ve barely eaten today. I’m putting it off so I don’t have to deal with the clinical aspect of every tiny crumb.

However, your salads are inspiring me… I’m going to go and make a salad. Thank you.

@paywalled I've never made chicken liver pate (I know there is an accent but can't find it on keyboard!!!) or a smoother pate, but coarse mackerel pate is very easy. I like it very coarse so I just shred the mackerel with lots of cracked black pepper, lemon. Rather than setting it with butter as some do I just put lots of butter (and rocket) on the bread. Sometimes I add a small amount of greek yoghurt if I want it to have a bit more moisture - it really depends on the fillets you have. Cross to open the fridge and see that DP guzzled lots of the fillets last night!

Everyone's lunch sounds delicious! I'll be having a chicken sandwich (made with left over roast chicken), a salad of grated carrot, cucumber and tomato with a homemade balsamic dressing and an orange.

A free lunch provided by my employer. It could be a sandwich, or it could be a full three course job. Depends what's on the menu and what I feel like eating. I acknowledge I'm spoilt by this, and retirement will come as a bit of a shock on the lunch front.

I'm going to make scrambled eggs on a toasted bagel.
Tea will be Costco chicken Kiev ( real chicken breasts) with new Jersey potatoes and salad.

today I am at home, so Greek yoghurt with berries, nuts and seeds. Nice and healthy.

Tomorrow, though, I am meeting a friend and we are planning to go to a very nice greasy spoon in the next town. No greek yoghurt tomorrow!

I make tinned fish paté by mashing the mackerel (salmon, tuna, whatever) with a bit of cream cheese and horseradish and lots of pepper, plus whatever herbs seem appropriate.

I don't mention the fish part of the food, just call it paté, and my fish-refusing child used to eat it quite happily. Bloody kids 🙄

Freshly baked rustic bread that has just finished cooking in my Aga, filling the house and surrounding area with the unmistakable aroma of a French boulangerie, with butter curated by monks at the local enclosed order Abbey and delivered to me by bicycle, with home made yeast extract, lovingly cut into triangles.
i.e. marmite sandwiches. 😂
