I made bolognese for the kids with a cornetto for afters. They both had their school plays today and did really well so I made them their favourite.
DH had a pot noodle and went to bed at 5ish because he wasn't feeling well.
I haven't eaten yet and now that everyone is in bed I'm tempted to order a take away 😋

Smoked haddock, leek and Parmesan risotto with peas. Delicious and very much worth the tedious risotto stirring!!

Update: sadly no lovely risotto for us in the end! Both DD and I were home late, too tired and hungry to cook so resorted to an emergency Chinese takeaway.. 🙈

Shall persevere tomorrow night!

Minted lamb steaks with buttery crushed jersey royals, cauliflower & leeks, gravy and even more mint sauce on the sauce.

Tomorrow is gammon, egg, chips and peas.

I have to know.. are you a pineapple ring on gammon family or not??

One of my easy go to recipes-spaghetti carbonara. The traditional recipe is really simple. Cook the spaghetti. Meantime grate 50 gm of cheese (pecorino by pref). Mix with 5 egg yokes and a little water from the pasta. Cook the diced pancetta (no oil quickly then mix together (pasta, egg yolk, pancetta and cheese). Result is lovely.

Shakshuka. Sort of.

Diced a butternut squash and chucked in the oven to roast in butter and chili.
Sweated leeks and red onion for a while.

Added chickpeas (tinned), tinned toms, cumin, paprika etc and cook for a bit.
Put roasted squash in and I added some freezer veg too - peas and corn.
Bit of stock to loosen it.
Make dents in the simmering mixture and crack an egg into each dent.
Lid on. Cook for less than 10 mins depending on egg preference.

Serve with exciting bread.

Really good, I cooked mine for 25 mins at 220 and that seemed perfect, nice and caramelised on top, cooked through, but not mushy. They were delicious, I'm definitely making them again.

I have some prawns in the fridge marinading in garlic, lime juice and coriander. I think I may have been a bit over enthusiastic on the garlic though as every time I open then fridge door I'm nearly knocked out by the smell. I just want them with a really good salad with a Mexican sweet corn salsa but will cook linguine with cherry tomatoes for those who only eat salad as a token gesture to shut me up!

My enchiladas last night were great but I burnt the roof of my mouth in my greed to devour them moments after they’d been taken from the oven 😡

DH is working a slightly later shift today so we’ll be getting Deliveroo when he gets in. Hopefully Wing Stop 🤞 🌶️

We had this tonight, with some steamed tenderstem vegetables. First time trying it, and to be honest, a bit faffy for me, but very tasty

Mexican Chicken and Rice Bake | Slimming Eats Recipes

I made up something similar to this but much less faffy:

150g rice into a baking dish/casserole
Mix in a teaspoon (ish) each of cumin, paprika, chipotle chilli (paste or flakes) and garlic puree
Chuck in a carton of passata and a tin of black beans/kidney beans/pinto beans/ whatever including the liquid
Add chopped chicken or veg (peppers, mushrooms) if you want
Mix, season then bake for 25 mins. Top with lots of grated cheese and bake for a further 10 mins
