Homemade lasagna.

Is it one of the best inventions known to man?
Just stood in the kitchen with my lovely meaty, tomatoey sauce in one pan and the cheesy loveliness in the other. One of the best best is getting a spoonful of the mincemeat and topping it with the cheese sauce and just eating it off the spoon, whilst you’re stood over it, cooking it all. It has to be a very tomatoey, cheesy, thick lasagna, also extra nice, if left and eaten later in the evening or the next morning,

Anyway, sorry, just a homemade lasagna appreciation post.

Every few months I make a massive amount of the ragu sauce and portion it up for the freezer, so when I make lasagne I only have to make the white sauce as the meat is ready to use, saves much of the faff.
I now want lasagna for tea.

I serve mine with peas and put vinegar on it. Apparently also odd, but I'd like to to try your potato idea.

I'm not here arguing how British people should say it, but in Italian there is no 'n' sound and no 'y' sound. Google an audio of how Italians say it.

Baffled by this (and interested, because I'm a languages teacher and speak a bit of Italian). I think it's a 'ny' sound as in 'onion' or 'Anya'. I just googled and listened to 4 different Italians saying it, and it definitely does sound exactly like that.

Bought lasagne sucks. A good homemade lasagne wins every time. However, it is a time-consuming dish to make from scratch. We tend to make the meat sauce in a big batch and freeze it, then defrost a batch so less effort is involved when we want to make lasagne.

Good homemade lasagna takes time over a couple of days IMO.

I love the traditional recipe with the meat cooked in milk, and the white sauce milk boiled then left to cool with onions in.

Also has to be half beef/pork.

I know how Italians say it. I'm in Puglia. I don't need to Google how Italians say it, and neither does the poster you were correcting.

Of course there's a /n/ sound in Italian. It's a very phonetically regular language. There wouldn't be a letter "n" if it didn't have a sound. The city isn't Aples, is it?

There isn't a corresponding phoneme in English for the Italian "gn" letters, no. But the closest pronunciation is absolutely the one the pp gave that you said was wrong.

There isn't one "y" sound (corresponding to the letter "y") in English either btw. It's represented generally by /j/ when the sound occurs at the beginning of a word (yes, university etc) and by other vowel/semi-vowels when it occurs elsewhere. (happy- letter y completely different in pronunciation from the y in yes, and the sound /j/ at the beginning of university.

I love lasagne! I make it in a huge tray, 20 portions, and freeze it. I always have some in the freezer. DH said it is better than any he's ever got out. I honestly even think it was almost on par with the one I had in Rome.

When I was 18, an Italian lady taught me how to make ragu. Her advice was that you can put whatever you like in it, but you must cook it for at least three hours. Never fails.

I'm sorry but it's really not. I'm not italian but have been fluent, albeit many moons ago. I'm portuguese and we have that sound as well, maybe that's why it's so clear to me it's not like onion at all.
Maybe an italian will come along and back me up!!

You want time consuming, faff and food porn then meet my dh. First the meat, shin of beef braised for seven hours in red wine, garlic, herbs etc. This must then be left overnight (no idea why). Next day the tomato sauce is made using the now very beefy and herby red wine. Meat shredded into the sauce.
Cheese sauce, must be full fat milk and only Gruyère cheese allowed. Lasagne sheets only one Italian brand allowed, Assembled, into oven and then left to cool for 30 minutes before serving. It’s delicious obviously but ffs. He’s not Italian and has a demanding job to answer two obvious questions.

It’s a true labour of love, but well worth it. I make a big one and then portion and freeze the leftovers. I’m a shit cook but I make a mean lasagne.

Indeed, can’t be overcooked: friend with Italian in-laws. Says there’s always a pot on the go in their kitchen when it gets low, it’s topped up anew. Some of it must be simmering for at least three days 😁

I love lasagne, make several versions, the traditional bolognese one, a veggie one with red lentils, grated carrots and grated courgettes in the tomato sauce, and a chicken one that I seem to have lost the recipe for but can probably find an online version of. I now want some lasagne and it is bedtime and I had my tea quite late!

Could you recommend a good red lentil veggie recipe please? I've had lovely ones eating out but never been as successful at home

sounds like heaven on earth, I am always very restrained and do broccoli and green beans or a big mixed salad, now thinking sod that and am going full on carb fest

Homemade lasagne is the food of the gods, served with green salad and garlic bread. My personal favourite recipe is James Martin’s. Pure bliss
