Homemade lasagna.

Is it one of the best inventions known to man?
Just stood in the kitchen with my lovely meaty, tomatoey sauce in one pan and the cheesy loveliness in the other. One of the best best is getting a spoonful of the mincemeat and topping it with the cheese sauce and just eating it off the spoon, whilst you’re stood over it, cooking it all. It has to be a very tomatoey, cheesy, thick lasagna, also extra nice, if left and eaten later in the evening or the next morning,

Anyway, sorry, just a homemade lasagna appreciation post.

Make double the quantity of ragu, then a couple of days later, use it to make moussaka, which is another kitchen marathon but so much worth it.

But but but moussaka and lasagne have completely different meat filling.
The recipes I use for the meat part of lasagne and bolognese are different. As is chilli. So I never understand threads saying you can make ragu and then make different meals.
Bolognese and lasagne are probably meant to be the same though.

I use v different recipes for lasagne, chilli and Moussaka. I do use the sane ragu for bolognese though. It is handy to have a second dinner option after the effort. If making lasagne, I will have at least 3 dinners worth and usually at least one portion of just ragu. If I make it for bolognese, I will have about 6 bags going in the freezer for the future.

I want lasagne now, although I'm slightly horrified at some of these recipes.

A 10 minute beef ragu, not a hope in hell that tastes of anything.

Ragu simmered for at least 4 hours (onion, carrot, celery, garlic, beef and pork mince, rosemary, parsley, oregano, bay leaves, tomato puree, decent beef stock, red wine, and good quality chopped tomatoes, fresh basil in last 10 mins of cooking. Chuck in the rind of some parmesan if you have it.), bechamel, fresh lasagna sheets and a very generous grating of parmesan on top and sprinkled with some fresh basil. Best served the next day after setting overnight in the fridge.

Yup, there’s no way a ragu could be done in ten minutes! Mine takes hours and just gets better and better - I wonder how long you’d have to cook ragu before I started getting worse? It must go inedible/bland/meh/okay/good/awesome/ awesomer 🤣

Our recipes are very similar but I use thinner tomatos and add nutmeg to my béchamel.

The herbs and spices etc in moussaka and lasagna are totally different. Quite aside from the fact that one is lamb and one is beef.....

The most delectable lasagne I've ever had was a spinach and ricotta lasagne. I really need to make one soon.

Yes the sauce is not a quick one, I leave it to simmer for around an hour, my dad does hours and hours for bolognese sauce, my mum gets so angry at him as she has to wait 😂

Making it next weekend! I've got a Parmesan rind in the freezer for the ragu and I do the béchamel with added Parmesan

It’s good for a day when you’re not going out. Hugh Fearnley-Whittingstall’s mum’s lasagne takes 7 hours to make.

I love lasagne, make several versions, the traditional bolognese one, a veggie one with red lentils, grated carrots and grated courgettes in the tomato sauce, and a chicken one that I seem to have lost the recipe for but can probably find an online version of. I now want some lasagne and it is bedtime and I had my tea quite late!

Love it! My ultimate favourite! Serve it with garlic bread or chips or salad or all three! Gorgeous! And always serve a massive portion! It’s the law.

@Idrinkmywhiskeyneat thank you for this thread. I shall try and keep a long story as short as I can to let you know why I'm thanking you. I have cancer of the oesophagus. Actually, if treatment has worked maybe I don't. I'll find out by the middle of next month. Anyway,poor me etc. I drink a lot of food supplements because for ages I just couldn't eat because food go stuck and blah. Recently I've been aware that I'm sure I could eat more but I have a bit of a mental block and get scared that x will get stuck and I don't want to try it. A couple of weeks ago a friend and I talked about cheese for an hour - we are that exciting - and I brought up Gouda and then really, really, really wanted to try it. I did. I am currently eating it every day without too many problems. I want to introduce more food to my diet (I am underweight, it's not nice to look at myself) but it needs to be something that suddenly grabs me from somewhere and then becomes like some made pregnancy craving but, you know, cancer instead. I read what you'd written, read a bit more and now I desperately want lasagne and it has to be homemade. It couldn't be real meat as that is a definite no-no for now, but with well seasoned quorn or similar. I am salivating.

This has ended up longer than I wanted it to be. Of course you're not unreasonable and (currently) 13% of people on this thread are a bit wrong, possibly in the head. You've made me happy and I'm going to get a friend to help me make a really good homemade lasagne (I used to make great lasagne, I need help because I'm a bit feeble at the moment, blah, blah). If it turns out I can't eat it (slowly, all eating is slow) then she can have it, there's no waste and a delicious lasagne gets eaten one way or another. Thank you for giving me a seriously tasty in so many ways, from actual taste to smell and texture and oh my, craving. Possibly the best one yet!

  1. You can still do your double dippy stuff
2.you do not need to add potatoes

Although IMOP you do not need to add potatoes to lasagne as double carb melt down

And it's amazing cold too... Just wandering by the fridge, with a spoon.... Nothing to see here!

Lasagne is no more hard work than a spag bol. Cook your lovely flavoursome mince. Instead of boiling spaghetti, mix up a quick cheese (or white) sauce using a classic roux.
Layer, grate a bit on top, bung in the oven. Serve with salad (or chips, or indeed boiled potatoes, or mash!?!!) I prefer it with Sarsons vinegar 😂

Lasagna is my comfort food. It is not hard to make really, just time consuming which is why when you make ragu you have to make 5x more than you need and freeze so you can have bolognese/lasagne in reserve for when needed. I made a cottage pie the other day and that was amazing and a good chilli. All need long and low heat cooking to make them great- which is why you need to have them cooked and in reserve for duvet days.
