A flan is a crusted crustless quiche. A crustless quiche is a crustless flan. Except a quiche must have eggs in it, otherwise it is an flan. A quiche has eggs and cream eggs in it, and a crust. So a crustless quiche is a quiche without a crust. The filling of a quiche is an omelette with eggs and cream in it. Which is not an omelette, because omelettes don't have cream in them. Fritattas and such are foreign omelettes, as opposed to omelettes, which are French.

Yes I was going to say that! A British flan has a sponge base and tinned fruit and jelly. A Spanish flan is like a crème caramel.

It's just a pie without a lid, it'll be fine.

The difference between tortilla and fritatta, however, has always eluded me. I believe one always contains potato, and the other sometimes contains potato (can never remember which is which). Which leaves me at a loss as to how to distiguish a sometimes one that this time does, from an always one.

More topically, I have all the Pat Ried and Airey Neave Colditz books, so am happy to kick off an escape committee. Although it sounds as if we may have to concentrate on getting people in rather than out - at least until mid January.

Have you ever been to Colditz? Went quite some years ago, and it was absolutely fascinating. Very hard to find, though, as I recall.

@BinturongsSmellOfPopcorn a tortilla always contains potato (and nothing else according to Spanish friends: no onion, no garlic, no herbs). Whereas a frittata can have anything in it that you fancy. I’m partial to roasted courgette, tomato and feta with a good sprinkling of thyme.
