Peel or don't peel

Root ginger. Do you? Bastard fiddly stuff. I really think life's too short for that kind of faffing about, but my mum seems to think it's going to poison me if i don't peel it.

Just use the edge of the spoon to scrape off the peel. Lots of videos via google

I chop to expose the inside then stick it cut side down in the garlic press :) leaves most of the skin behind and anything else is easily picked out.

I peeled it for years and now I don't bother, and I can't tell the difference once the food is cooked.

ok, so if i'm going to peel it i should use a teaspoon, but still don't know why you all peel it?. Did you all try it with the skin on and not like it? Or just do it without question because everyone else does? Surely can't be only me and BlackForest who think it's a waste of time.

A jar of Lazy Ginger solves it for me, plus if I buy fresh I end up wasting some as it goes mouldy by the next time I use it.

I grate it, skin on.
Pesticides on surface not an issue as it grows underground.
