Read the thread title and before I’d opened it I immediately thought “the Beeb’s 1990s Pride & Prejudice with Colin Firth and Jennifer Ehle” so I’m 100% with you, OP! It’s my comfort TV when I need a boost. Everything about it - casting, settings, costumes - is utterly perfect.

A very current one is The Bear.
I was reluctant to watch it with DH but it's just perfection.
It's like Atlanta mixed with the Sopranos but with the most beautiful stand alone episode of a TV show I've seen in a while - Honeydew.

Another vote for Detectorists. Magic from first to last episode.

I love the BBC’s North and South with Richard Armitage. Far less well known than Pride and Prejudice but well worth a watch.
