All my knives are rubbish, all need throwing.

We're having a new kitchen out in and I want some really decent knives.

Any recommendations?

All I can say is don't buy these! Black coating peels off after a few washes, the blade snapped on the second smallest, I emailed hoping for a refund and they sent a second damn set out!

Firstly, YABU for posting here.

You don’t need a knife block. Most people only use a chef/santoku knife, a paring/utility knife, and possibly a bread knife. I have a Victorinox Fibrox chef knife and i think it’s great. I bought it as a cheap knife, which is still well regarded, to help me figure out what I wanted in a knife but I don’t feel any need to replace it. You haven’t said what your budget it, but I imagine this would be fine. If you are looking at a very high end knife, I would recommend posting in the chefknives subreddit, as they have huge a makings of knowledge of different knives if you share your requirements and budget. I’d also try to see if you can hold the knife before committing as the greatest blade in the world isn’t going to help you if the handle feels horribly uncomfortable.

Also no knife, no matter how high quality, will maintain itself. Never put your knife in the dishwasher. When you wash it, dry it immediately. Use a wooden or plastic chopping board, never glass or cutting on your countertops. Store your knives in a knife block or magnificent strip, as having them loose and clattering against each other in a drawer will blunt them. I use a honing steel several times a week to to maintain the edge on the blade. You should only need to sharpen with a whetstone every few months/year to truly sharpen the knife. Pull through sharpeners tend to be bad for blades, so I’d avoid those, and I find a honing steel easier anyway.

For smaller everyday knives the Victorinox ones are very good, they also go into the dishwasher.

I have really expensive ones but the ones that stay sharpest and are nicest to use are my Zyliss ones.

As a chef in a former life, I would say don't bother with a knife block and buy Victorinox as the PP said. I have mine for over 20 years, a veg knife, a carving knife and a chopping knife along with a good kitchen scissors. I will say mine have never seen the inside of a dishwasher and they are still perfect.

I store my knives in this, you can get different colours, then you can choose your knives rather than buying a block

I have a global block. Bought circa 2004 and still going strong!

Been through about a thousand dishwasher cleans and all seems well.

No complaints from me at all. In fact, they may be the oldest kitchen item I have, come to think of it.

Wusthof chefs knife has been great for us. And then I have a Lakeland bread knife and another chefs knife that’s not so good. That’s all you really need and sharpen them regularly.
