To ask for kitchen knife recommendation

All my knives are rubbish, all need throwing.

We're having a new kitchen out in and I want some really decent knives.

Any recommendations?

I love my Robert Welch set. I bought the knife sharpener and replacement sharpening wheels too.

We are keen cooks and make every meal from scratch. That said, our knives are a small santoku and a chef's knife from tK Maxx. Sabatier ones that are going on 15 years with no issues.

Our new ones seems to be holding up as well as the ones that are 12years old. They are comfy to hold and use

Firstly, YABU for posting here.

You don’t need a knife block. Most people only use a chef/santoku knife, a paring/utility knife, and possibly a bread knife. I have a Victorinox Fibrox chef knife and i think it’s great. I bought it as a cheap knife, which is still well regarded, to help me figure out what I wanted in a knife but I don’t feel any need to replace it. You haven’t said what your budget it, but I imagine this would be fine. If you are looking at a very high end knife, I would recommend posting in the chefknives subreddit, as they have huge a makings of knowledge of different knives if you share your requirements and budget. I’d also try to see if you can hold the knife before committing as the greatest blade in the world isn’t going to help you if the handle feels horribly uncomfortable.

Also no knife, no matter how high quality, will maintain itself. Never put your knife in the dishwasher. When you wash it, dry it immediately. Use a wooden or plastic chopping board, never glass or cutting on your countertops. Store your knives in a knife block or magnificent strip, as having them loose and clattering against each other in a drawer will blunt them. I use a honing steel several times a week to to maintain the edge on the blade. You should only need to sharpen with a whetstone every few months/year to truly sharpen the knife. Pull through sharpeners tend to be bad for blades, so I’d avoid those, and I find a honing steel easier anyway.

We also have an Anolon bread knife which is good. I be believe their knives are also good.

In reality knives within the same price point will all be just as good as each other.
cheaper knives are generally made from softer steel so cant get as sharp or stay as sharp compared with more expensive ones

I really like my ninja knives but haven't seen anybody else recommend them. I love the block with the inbuilt sharpening thing.

We have a fancy knife block, full of fancy knives, but the one I use multiple times a day is my trusty Devil's Kitchen "Tomato Knife". I've just replaced my first one, which I've used around 3 times a day for 12 years, but only because the rubber on the handle was wearing a little, but it's still brilliant. I use it for everything and the replacement I just bought was £11.99 on Amazon.

Throwing in another recommendation for victorinox. I was given a set of sabatier knives years ago and have never really got on with them. My favourites are the little victorinox ones and wusthof serrated knives for tomatoes. I also have a fab Richardson Sheffield bread knife that came from the supermarket.

My top tip has already been said, but buy a steel and get a chef or someone else who knows to show you how to use it.

I have this Kitchen Devils bread knife (think it was a Which recommendation) and it's excellent and very reasonably priced. Will be looking at Kitchen Devils for other knives when I need any more new ones!

I have three Robert Welch knives. Had them years without any issues. Reasonably priced, do their job and look good.

I've bought this Robert Welch set a few years ago and it's still as good as new. Never put the knives in the dishwasher though. The built in sharpener is handy as little and often is the recommended way to sharpen. The knife block has built in magnets so the knives aren't resting on their blades.
I didn't pay Lakeland prices though - got mine from an online catering supplier.
