To ask for kitchen knife recommendation

All my knives are rubbish, all need throwing.

We're having a new kitchen out in and I want some really decent knives.

Any recommendations?

Harts of Stur often has good prices and sells the global knives, I often buy kitchen stuff from there, always good service and delivery.

What lecture? Other than the first line, all was directly relevant to your question, and then I added some info on how to maintain the blade so your new knife lasts as long as possible…

Another who recommends Victorinox and only buy the knives you use as a there's always one or two in a block that don't get used.

@toastofthetown I'm able to look after knives, I asked for recommendations not to be lectured about holding them and washing them. I can't see any recommendation in your post? Any to try?

Thanks for your input, but I'm getting plenty of recommendations elsewhere, which I can then review myself.

This is a starting point and I'm able to review and look at how to store, wash etc the knives once I've selected ones I like.

I've had the same Sabatier knives for nearly 50 years.

I did drop one the other day and the handle broke off. Things just don't last do they!

I would look for a knife that is all one piece or the tang (the bit that it inside the handle) is the complete length of the handle.

I believe Global are very good but very expensive, however don't buy off ebay (or similar) as there are a lot of fake ones there.

I swear by kitchen devils and I always put them in the dishwasher. Kitchen devils sell a sharpener too

I would probably get 2 or 3 of expensive knives for specific use, carefully cared for, and half a dozen cheaper everyday assorted Victorinox plastic handle ones that you can sling in the dishwasher, that's what I find works well.

We bought some new knives a few weeks ago and no-one in my household listens to me re washing and drying and using the plastic or wooden board...but maybe they'll listen to you! It kills my soul every time I hear someone cutting on glass.

Sorry, I don't like being lectured like a seven year old who has asked for a new bike.

You can only have it, it you look after it, if you lock it up blah blah.

I'm a fully grown adult.

Another vote for Global knives. We got ours with wedding money 25 years ago. The end did break off the thinner one though and we replaced it. That was probably about 10 years ago. Not had the same problem with new identical one.

They are sharp as hell when you buy them so be careful! Had a few finger injuries in the beginning.

Will see if I can find the two global knives we got as one is definitely better than the other.

@youbitchesaretwats Wusthof or Global if you want to spend £££, Victorinox if not. Worth a trip to a kitchen store to feel a Wusthof and Global chef’s knife in person as what suits one person won’t suit another. I don’t personally like Global knives.

Recently purchased some kitchen knives from Pro Cook, no complaints so far. Also purchased a "three wheel knife sharpener" from there which is good, I struggle with the "chef" type sharpeners.

For chef's knives, I have a Wüsthof Icon and my parents (for whom I often cook at theirs) have a Güde. Both excellent top range knives. I'd echo @toastofthetown's point on trying out the handles and length in an actual store first to see if they fit your hand. If you're happy with a somewhat shorter length and want to economize Ikea has a decentish chef's knife. I wouldn't look for a set but buy individual knives. In addition to a chef's knife and paring knife I have a good fileting knife (the slim long ones) which I use on meat - dismembering poultry, getting sinews off etc. For a serrated bread knife, a cheap basic one is totally sufficient ime.

I am very pleased with my Richardson Sheffield sabatier knife. I got mine from TK maxx but mine doesn't sell knives any more. I think the fact the tang goes all the way through the handle and the metal make up (X50CrMoV I think?) are two of the key things.

@toastofthetown is pretty much spot on. Nisbets are pretty much the dominant business in catering supplies, if it's in their catalog it's somewhere between standard pro quality and the very best.

Please do not put your knives in the dishwasher, even if they are dishwasher safe. Stainless steel has a protective chrome rich surface. When you sharpen a knife you effectively remove some of that surface, to get a nice sharp edge. If you put your knives in the dishwasher they salt and detergent will erode the edge meaning you'll have sharpen your knife again.

Also do get a good steel and learn how to use, it takes practice but we'll worth the effort. There will be hundreds of YouTube videos I'm sure.

I have used a Global knife since about 1997 and it's still brilliant. I haven't taken anything like the kind of care you described up thread.
