Supposedly that is the original Italian recipe and adding cream is sacrilege (according to the late Antonio Carluccio). If you want to loosen it up because it's too dry add some of the cooking water from the pasta.

Eeew. Although YABU too. Ought to be guanciale, at most pancetta, not bacon. And pecorino not parmesan.

Traditional Carbonara is

Spaghetti
garlic
parmesan
eggs
salt & pepper
bacon.
butter (to fry the bacon & garlic in).

yes pasta as a vehicle for the sauce. And to provide a spoon or two of pasta water to make the sauce.

black pepper…yes.

I love a Campbell mushroom soup vol au vent.

Fair enough…not bacon…but tonight I had bacon in not pancetta. And no giuncale to be had where I live.

Nope, no cream. If its too dry you use the pasta water.

Definitely no mushrooms.

And yes, it's supposed to be pigs cheek not just any old bacon, and pecorino.

Obviously you can put whatever you want in it, but then technically it's not carbonara. Wink
