Egg yolk, pigs cheek, half Parmesan/half pecorino Romano, black pepper and spaghetti. Anything else is an abomination!

I cook carbonara the traditional Italian way….definitely no cream !!!

mix eggs and parmasan in a bowl
fry off some pancetta with garlic and butter
cook spaghetti in saucepan.
add cooked spaghetti with spoon straight from saucepan doesn’t matter if some water goes with it

then add your egg mix and toss quickly so eggs don’t curdle

if it’s a little dry add some more pasta water

hey presto traditional carbonara !

No garlic, no butter, definitely no cream or mushrooms. Guanciale is closer to pancetta than pigs cheek from a uk butcher as it’s cured like bacon and streaky bacon does give a very close taste it’s just not available in Italy so we don’t use it in traditional carbonara. My issue with variations is simply your pasta with bacon, ham, mushrooms, garlic, cream etc may well be how you like your pasta and that’s fine… just don’t call it carbonara, it’s not carbonara any more than greasy cheese and tomato purée loaded bread from the takeaway is pizza 👐🏼

I still make chicken supreme using a recipe from the back of a Campbells condensed chicken soup tin many many years ago. It’s delicious.

That is, um, interesting. It's a creamy pasta dish but can't be called carbonara.

I do add one extra thing to mine though: when the pancetta/gaunciale/bacon is nearly cooked I stir in a grated courgette. Cook that down a bit before adding the spaghetti, egg and cheese. Works really well and I kid myself that it is a portion of veg for the dc.

Yup we sometimes add mushrooms to ours - but otherwise as you say OP.

Bruise garlic cloves
Cook pancetta with garlic cloves
Remove garlic and set aside pancetta
Scramble eggs and add Parmesan
Strain pasta, keep some cooking water
Add egg mixture and pancetta to pasta (off the heat). Add a little cooking water to make it silkier.
More Parmesan, black pepper.

That is an abomination. I will sometimes add a little fresh parsley if I'm feeling rebellious but whe it comes to carbonara less is def more.

You are right but no garlic. Also anybody who thinks they are catching you out by saying they usually like to add pasta, if you look at Italian recipes for it, they say spaghetti alla Carbonara so I think it's fair enough not to specify the pasta.

It really is delicious the traditional way and not dry because of the eggs and pasta water, and also all the fat from the pancetta and the cheese makes it even more yummy.

Carbonara is rank and that recipe is rank, therefore it’s basically authentic. It’s in the spirit of the original dish: fucking horrible.
