To ask for a no bake dessert?

I need to make a dessert for 8. Oven just went pop so no baked cheesecake. All out of inspiration. Trifle isn't exciting me. Any ideas?

I like the idea of lime something. Maybe the key lime pie. I'm also a fan of tiramisu but I'd make with ready done custard I think in this heat

K1233 those cheesecake bites aren't really cheesecake are they, but I recon if you rolled the underside of the strawberry in digestives, they actually would be?

What multipack, @TroysMammy? I had no idea you could buy them - I’ve only ever had home made. I bet my home made chocolate one is a lot nicer than anything from a shop!

My standby go-to lazy pudding is:

Buy a rectangular lemon drizzle cake from a farm shop

Slice of cake, handful of raspberries, scoop of mascarpone or whipped cream or creme fraiche.

Mary Berry's white chocolate and raspberry cheesecake - although you could forget the raspberries and use chocolate orange pieces or anything.

Nigella's marshmallow chocolate mousse.

@GETTINGLIKEMYMOTHER - Pearce and Duff - chocolate, strawberry, raspberry and vanilla. It appears the supermarkets no longer stock it Sad. I used to make it for my DP's Christmas Eve birthday tea, he's 57. Goodness knows how old the leftover packets in my cupboard are then Blush

For those recoiling in horror I know that tiramisu doesn't have custard. However I have tweaked it before when pregnant and made with a custard lightened with mascarpone. Authentic is better but it was fine! I promise. Anyway I'm on with key lime pie but my tin looks full even with just the base! Nigella has so much kitchenware I'm sure to have used an Inadequately shallow one

@Oblomov21 no, not really cheesecake, it's just what the recipes call them. They are a perfectly balanced pop of flavour -just with the cream cheese and icing sugar - no other additives. As I said, people can't stop eating them. Simplest summer dessert I know. I made them for a work morning tea and they were hoovered up.

Using custard in a tiramisu along with cream and mascarpone is genius. Much less faff than making a zabaglione and safer than using raw eggs. Going to give that one a try, thank you.

The posters who suggested the obvious but excellent option of a no bake cheesecake are right. You can't really go wrong and it's so easy to make.

I don't think anyone suggested a fruit salad. Rarely seen nowadays but can be enticingly jewel like.

Chocolate mousse

Separate eggs
Melt dark chocolate
Whip egg whites to peaks
mix egg yolks and melted chocolate
gently combine chocolate mixture & stiff egg whites.

If you want it to be super-rich, beat cream, and combine the chocolate & egg white mix with the cream.

I generally add either some vanilla or some brandy, or both to the melted chocolate. Slowly, so it doesn't cloud the chocolate.

@RosesAndHellebores this is a beauty of an idea for next time. I've a key lime pie made now though so a kind of cheesecake without the cheese. I'm bookmarking my own thread though for all the ideas including the salted chocolate pie mmmmm
