To ask for a no bake dessert?

I need to make a dessert for 8. Oven just went pop so no baked cheesecake. All out of inspiration. Trifle isn't exciting me. Any ideas?

My son asked to make a white chocolate and biscoff rocky road the other day and it was bloody delicious! If you don’t want a rocky road you could take the ingredients and make a sundae with it instead.

Now starving! I think I'm sulking about no bake cheesecake because I knew what I wanted to make but some good suggestions for recipes here and I'm grateful for them thank you - recommendations always better than reviews in my experience and sorry if I frustrated anyone. I need a new oven pronto. I was going to also make shortbread again today. 😡

@dodgynoodles I remember a similar recipe but with crunchy nut cornflakes in the 80s! Memories. Maybe I'll go buy a birds trifle

I love doing a Tiramisu but avoid it in Summer as it is basically just a raw egg mixture.

Cheesecake is also a good idea,

Tofu chocolate cheesecake.

Only need to melt butter to bind biscuits & melt chocolate (microwave is your friend), the rest can be done without heat and sets in minutes.
Make Biscuit base & cool >digestives or ginger snaps work well.
Silken tofu & melted choc of your choice and some cream (works with soya or dairy) > whip it up, maybe add some icing sugar if Chocolate is too bitter. Pour into set base and put in fridge for 30 mins to stiffen.

I'd second what @Jelly0naplate said. Jane's Patisserie has some lovely no bake recipes. I've just made the Terry's Chocolate Orange Tart, and it went down a storm. Really simple to make too, and very few ingredients.

This is lovely… Tin of mandarin oranges Ginger nut biscuits Double cream
  • dunk biscuits one at a time in mandarin juice
  • layer each biscuit with cream to make a ‘log’
  • cover the whole thing in cream and decorate with the oranges

I made this about 25 years ago and I remember it being really nice as the biscuits became a really nice texture. It might be better with whipping cream so it’s a bit lighter

This sounds like it would taste great but I can make neither head nor tail of these directions!

What do you mean layer the cream? Am I whipping the cream?

Do the biscuits come together to make the shape of a log or do you mean each individual biscuit should be the shape of a log.?

I've been making cheesecakes for years and have never baked them. Is baking the standard method for making cheesecakes?

Traditionally cheesecakes are baked, like your classic New York vanilla cheesecake. Very delicious but heavier and more work involved.

Thanks. So is it just traditional for US cheesecakes to be baked or were all cheesecakes traditionally baked?

Btw, I've only ever made vegan cheesecakes. I don't know if that makes any difference. I've been vegan for more than 30 years do never tried a New York cheesecake (they weren't a thing in the UK when I was growing up).
