Making a roast next week. I’m a pretty good cook but rarely cook roasts. Want it to be gooood. Any tips, particularly for the sides?

Chicken crackling. Peel off the skin when chicken is roasted.lay on a roasting sheet. Put back in the oven for about 10 minutes. Crispy crunchy gorgeous stuff.

Dauphenoise potatoes. Yum. We always had apple sauce with toast chicken when I was a kid too.

I do cheesy leaks & honey roasted parsnips when I want a fancy roast. Usual sides are broc, carrots, cauli cheese, cabbage, roasts, mash & yorkshires.

I never used to do Yorkshires but went to a friends for Christmas dinner and she did them. My family insisted from then on.
