Making a roast next week. I’m a pretty good cook but rarely cook roasts. Want it to be gooood. Any tips, particularly for the sides?

I have started roasting cauliflower in a hot oven with olive oil and seasoning and it is a revelation.

If you’re really going all out, then sage, onion & sausage meat stuffing. Roast potatoes. Gravy. Never mash - pointless filler when you could have roasties. I love gratin dauphinois with beef or lamb but not with chicken; it’s too much white on the plate, I think.

Nobody in my family likes turkey so we have a cockerel at Christmas and I can confirm from extensive research that all of the usual trimmings go absolutely beautifully.

Cheese sauce does NOT belong on a roast, the thought of it mixing with gravy....bleurgh

Oat and onion stuffing, baked in a separate dish ie not stuffed into the bird. Chopped rolled Oates, finely chopped onion and suet baked for 30 mins. Beautiful.

DH puts BUTTER on mash even if’s a roast with gravy. I considered divorce.

Cheesy leeks are our favourite accompaniment to roast chicken! I use an adapted low carb recipe (the original recipe was for blue cheese).

Sweat leeks in a bit of butter for a few mins then add a small amount of water and a half tsp of veg stock powder. Simmer until liquid has just about evaporated then add a good slug of double cream and lots of grated cheese. Stir until all melted and gooey and perfect.

Roast chicken is a favourite here, it must be served with homemade stuffing, peppery mashed turnip, peas, creamy mash, roast spuds and real gravy, ti's the law here!

I cheat and buy a couple of slices of white pudding from the butcher. Just put them in the oven for the last 20 mins the roasties are cooking, and they are done.

I also made a chard gratin once to use up some I had grown. Was delicious and would go well with roast chicken.
