Pickled beetroot

Now I love fresh beetroot, I want to get some jars of pickled because of the long self life.

The problem is, i loathe cold meat, sandwiches and salads 🤢

So what the heck could I do with them if I bought them?!
All the recipes I can find state sandwiches and salad and cold meat....

Can I just give them a quick rinse and roast them like I would fresh or will that taste awful..?

No that would be awful. I like pickled beetroot with things like shepherd's pie or beef stew. Give it a try, sounds odd but it's great.

That would taste of hot vinegar.
The pickling liquid soaks right through, it's not just on the outside of whatever is pickled.
You can buy cooked beetroot without vinegar, vacuum sealed.

The vacuum packed unpickled ones have quite a long shelf life.

Maybe you could do some sort of red cabbage and beetroot combination with pickled, as the cabbage needs some vinegar?

Yes, I think I have bought that before, they are quite annoying and messy to open I find but if they have a decent shelf life on them I’ll stock up thank you

Mince and tatties. Shepherds pie.

Basically any mince with potatoes has beetroot on the side.

I understand the Aussies and Kiwis put them in burgers. Sounds good.

I've just had a veggie burger with roast spuds, cooked beetroot with balsamic vinegar (cold) and some Turkish style chopped salad. Delish..

I love picked beetroot. I put it in the below

Cheese sandwiches
Roast dinner
Shepherd pie
Salad
Tuna sandwich
Anything with gravy
Scouse
Stew

Hm, lots of helpful suggestions here.
Those saying with stews and cottage pie type dishes, how?
Plain as a side dish? Or added to the actual stew/casserole/pie?

I don’t like blue cheese, would possibly be willing to try with a milder hard cheese and crackers.
But not bread.

We have it with breaded fish. Also with say chicken egg fried rice I make. Nice on the side.

The vacuum packed beetroot you can roast. I have used it in a warm salad when I can’t get fresh.
For a warm salad I roast beetroot, red onion and butternut. And mix with steamed kale and halved sprouts. With a dressing of lemon juice, olive oil and Parmesan.
